This recipe came to me from a friend who is a Olympic swimming coach. She's always looking for recipes with protein, a pop of taste, veggies and some crunch that can be prepared without too much fuss. Aside from poaching the chicken breasts and toasting the seeds and nuts, this recipe is summer-friendly. A great salad to take to a group affair.

Head of cabbage, hand shredded

8 green onions, thinly sliced

4 Tbs toasted sesame seeds, 325 oven for 5-6 min.

1 cup toasted slivered almonds, 325 oven for 5-6 min.

2 pkgs Top Ramen "Oriental" flavor soup noodles (broken up)

5 chicken breast halves, poached and cooled then shredded

Toss the cabbage, onion and chicken. Before serving, toss in the noodles, almonds and sesame seeds. Pour over a dressing made of the following:

Raman soup seasoning packets (from the Oriental flavor soup noodles)

1/2 c vegetable oil

1/2 c sesame oil

4 Tbs sugar

6 Tbs cider vinegar

Salt and pepper to taste

Toss well and Enjoy!
