Chicken recipe from this morning’s ITKWD

I've spent too much time looking on YouTube and Pinterest for the chicken ranch cream cheese recipe David was talking about this morning.

It has chicken, cream cheese, bacon, ranch dressing mix, cheddar cheese, and scallions. The recipes I have found also contain canned soup, sour cream, milk in and spices which is not what I am looking for. Thank you.

where is that chicken recipe it need to be posted it looks so good recipe on the tsv they were showing it david said it was low carb

Did he say Low Carb?  Well, I guess he must be correct.  However, the sodium, fat and cholesterol levels would ratchet up in that recipe.  My PCP wants me to lower my BP.  I guess that is not a recipe for me.

It's a popular internet recipe called or variations of Ranch Cream Cheese Bacon Crack Chicken.   

 

I'm going to make it with some revisions by lowering the softened cream cheese amount, mix with ranch & bacon, adding onion or garlic powder or fresh and then smear on top of sauteed chicken breasts.  Won't be adding cheddar as in the recipe, just will smear the mixture on top of the chicken sprinkle parmesan on top and bake.  After cooking top with sliced scallions and bacon crumbles.

 

May try it a simpler way, chicken breasts in baking pan without searing first then doing the other steps.

I just had a thought.  If I'm going to saute the chicken I think I may also separately saute mushrooms, get them nice and carmelized.

 

Think they'd be a nice addition making it kind of stroganoff-ish and also add some flavor since I'll be lowering the cheese amount.

@Flika13 Hi. I didn't see the presentation with the chicken cream cheese ranch being discussed.  I did find a recipe on hidden valley dot com and a recipe on saltandlavendar dot com for what is called "Crack" chicken.  The ingredients are:

 

 

  • 6 strips bacon cut into small pieces
  • 4 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Pepper to taste
  • 8 ounces cream cheese softened
  • 1 tablespoon ranch seasoning I used Hidden Valley
  • 1/3 cup scallions chopped
  • 1 cup cheddar cheese grated

Instructions 

  • Preheat your oven to 375F and move the rack to the top third of the oven.
  • Cook the bacon in a large oven-proof skillet until crispy (I cut it up quickly using kitchen shears). Transfer the bacon to a paper towel lined plate, and leave about 2 tablespoons of bacon fat in the skillet.
  • Season the chicken breasts with the garlic powder and pepper, then add them to the skillet and sear for 5 minutes/side over medium-high heat.
  • Meanwhile, add the cream cheese (microwave it for 30 seconds or until soft if it's straight out of the fridge), ranch seasoning, scallions, and about half of the cooked bacon to a bowl. Stir until smooth.
  • Once the chicken has been seared, take the skillet off the heat. Spread the cream cheese mixture equally over the top of each piece of chicken, then sprinkle the cheddar over top, followed by the rest of the bacon. If you don't have an oven-proof skillet, transfer the chicken to a baking dish for this step.
  • Bake, uncovered, for 20 minutes. If your chicken breasts are on the smaller side, try 15 minutes then test for doneness (chicken is cooked at 165F).
  • Let the chicken rest for a few minutes prior to serving so it's nice and juicy.

@Flika13 I didn't watch the show but from the ingredients you listed it sounds like "Crack Chicken".  I have a co-worker that has eaten it at least once a week for the last several years 😂

 

Google "Slow Cooker Crack Chicken" and see if that's what David was making.

@rockygems123  and @EarthAngelInTraining  Thanks for the info! I was seeing recipes that were all over the place, and now I know why. Everyone has their own variations. I like your suggestions @rockygems123 , and @EarthAngelInTraining  thanks for the original recipe from Hidden Valley. I can see that you can really play with this.
