It does sadden me that posters can ruin a thread or worse a forum as I had my head handed to me on of all things an Aldi thread . . . sigh.

I am just so glad to know you are here and watching over us as you are missed more than I can say . . . Heart

Re: Chicken and Dumpling Casserole

[ Edited ]

I fixed this recipe tonight.  VERY GOOD! Found the Better than Boullion too....that does add to flavor....no going back to regular boullion now!  I think I might lessen pepper to 1/4 tsp but that is small item.  DH loved it.  I have enough leftover for another meal.  When I reheat, I will also fix buttermilk biscuits and serve it over those...yum!

Someone asked about dumpling type crust on top....no, not like a Bisquick dumpling on top of stew that puffs up.  More like dumplings/pasta mixed in....if that makes sense?

Thank you for posting this recently, Charhug and, also LilBitMissty for original post which I missed.  NIce to see you again LilBitMissty.

Re: Chicken and Dumpling Casserole

Speaking of rude, I just have to chuckle when the cream of soup police come out here. Seems they're sitting at the computer, chomping at the bit to rake somebody over the coals cause they dare to suggest using cream of anything soup in a recipe. It always boggles my mind.

I wouldn't want to live in a world without cream of mushroom soup. Ha!!!!!!!!!!

2 pounds of cooked chicken, cubed or shredded

1 cup all purpose flour

1 cup milk

2 Tablespoons of butter, melted

1 10.5 ounce can of cream of chicken soup

2 teaspoons of Better than Bouillon (Chicken base) and enough water to make 2 cups

1/4 teaspoon of salt (omit if you used salted butter)

1/2 teaspoon black pepper

Place the chicken in the bottom of a 11 by 7 inch baking dish.

Whisk together the flour, milk and butter; pour over the chicken.

Whisk together the broth, soup, salt and pepper; pour over the casserole.

DO NOT STIR.

Bake at 350 degrees for 50 minutes.

Let sit for a few minutes before serving.

NOTE:  If you do not have the better than Bouillon, use 2 coups of chicken broth.

this is a great dish!  I have been making one almost just like this for 30 years!  I got the recipe froma cousin from south Georgia, ahe would bring it every year to the family reunions!!  It was aways the first to go!!
