This is a Mr. Foods recipe, My family loves this dish.
Chicken and Couscous
1/3 cup olive oil
2 garlic cloves minced (i used jarred)
4 to 5 boneless and skinless chicken breast halves (1 to 1 1/4 pounds) cut into one inch pieces
1 med sized red bell pepper diced (about one cup)
1 med sized onion chopped (about one cup)
1 can 14 and 1/2 ounces chicken broth ( i have used light and fat free)
1/2 cup water
3 tablespoons chopped fresh parsley (i have used dried just use a little less)
1/2 tsp. ground cumin
1 tsp. salt
1/4 tsp. pepper
1 package 10 ounces couscous
In a large skillet heat oil over med high heat and cook the garlic for one minute. Add the chicken, red pepper, and onion. Saute for 8 to 10 minutes or until chicken is lightly browned on both sides stirring occasionally. Add the chicken broth, water parsley, cumin, salt, pepper. Bring to boil and stir in couscous. Cover and remove from heat. let stand 5 to 10 minutes or until water is absorbed. Serve immediately.
If you have any left over simply reheat it in the micro or skillet with a little chicken broth or water.
