My friend gave me this recipe and it is really very good. This can also be made in crock pot to avoid having to use the oven on these hot days.

Chicken & Sausage Bake

2-1/2 lbs - 3 lbs frying chicken

6 red potatoes, peeled & quartered

2 garlic cloves, minced

1/2 tsp onion powder

1 lb sweet Italian sausage, links

1 sweet green pepper, cut in chunks (optional)

1 large can tomatoes, undrained

Preheat oven to 375.

Peel and quarter potatoes. Cut chicken up into serving pieces and cut sausage links into 1-inch pieces. Lightly saute chicken and sausage in large ovenproof casserole until browned. Add tomatoes with juice, potatoes, garlic, onion powder, and green pepper. Bake covered for 1-1/2 hours. You want the broth to be a little reduced and the chicken to be tender. Extend time if needed.
