Chicken Vegetable Bake

2 tablespoons butter

1/2 medium onion...diced

1 carrot...cut in strips

1/2 cup celery...sliced

1 can cream corn

1 can peas...drained

1/2 teaspoon salt

pepper to taste

1/2 teaspoon thyme

1/8 teaspoon sage

2 cups chicken..COOKED and diced

2 cups mashed potatoes

1 egg yolk

In a saucepan, melt butter. Saute onion, carrot and celery til softened....about 3 minutes. Fold in cream corn, peas, chicken and seasonings. Spoon into a casserole dish. Spread mashed potatoes on the top. Lightly beat egg with a little bit of water. Brush the egg yolk over the mashed potatoes. Bake at 400* for 20 minutes or til hot and bubbly and the potatoes are lightly browned.
