Hey anyone from New Orleans? Could you share a recipe for chicken tasso. Thank you in advance.

Hi! I am from the North and therefore, had never heard of Tasso! I kept checking to see if someone had a recipe for you.

I had to google Tasso. How interesting! I doubt I can find it way up here though.

I found a recipe on food.com that sounds delish w/ the cream sauce. Next, I will google a substitute for Tasso that maybe I can find locally. Hope a real Southerner has some down home receipes for you!!

Just something i had on my recipe file, dont remember where i got it!! it might give you a little bit of something to go on.

Tasso chicken

3 cups diced chicken breast?
4 teaspoons Creole seasonings?
1 cup julienne Tasso
1/2 cup (1 stick) butter?
1 cup green onions, sliced 1/4 inch
?1 pint heavy cream
?2 teaspoons Creole seasonings (additional)?
3 pounds cooked pasta (your choice)?
1/4 cup grated Parmesan cheese


Cook pasta and drain well. Season chicken pieces with Creole Seasoning.
Melt butter in a saute pan.
Add Tasso and saute until tender and lightly browned.
Add chicken and green onions and saute until chicken is white.
Add heavy cream and additional seasonings.
Return to a simmer.
Add drained pasta to sauce and bring back to a simmer. Using tongs, transfer pasta to bowl and top with remaining chicken and sauce.
Sprinkle with Parmesan cheese.
Serve immediately.

another one..

Make 1 cup long-grain rice according to package and set aside.


IN A 3-QUART SAUCEPAN COOK UNTIL TENDER:
1 large onion, chopped
1/2 c. chopped celery
1/2 c. chopped green pepper
2 cloves garlic, minced
1/4 c. butter or margarine

STIR IN UNDRAINED:
1 16-ounce can tomatoes, cut up
1/2 of a 6-ounce can (1/3 cup) tomato paste
1/2 c. chopped tasso or smoked sausage
1 tsp. Creole seasoning or Three Pepper Seasoning

BRING TO BOILING. REDUCE HEAT. COVER AND SIMMER 30 MIN.

STIR IN:
2 whole chicken breasts (about 16 ounces each), skinned, boned, and cut into bite-size pieces
1/4 tsp. bottled hot pepper sauce

SIMMER, COVERED, ABOUT 15 MIN. MORE OR TILL CHICKEN IS TENDER.

STIR IN RICE. COOK, STIRRING OCCASIONALLY, TILL HEATED THROUGH.
