Chicken, Raspberry, Orange Salad

Chicken, Raspberry, Orange Salad

 

 

 Spring Greens              Cooked Chicken (I used  a supermarket

                                                       rotisserie cooked chicken)

 Fresh Raspberries

 

 Mandarin Oranges  (I used a 4oz. DelMonte cup for two 

                                                                        salads)

 

 Raspberry Vinaigrette : 2 Tblsp. seedless raspberry jam

                                       2 1/2 tsp. red wine vinegar

                                       1 tsp. Dijon mustard

                                       1/8 tsp. salt

                                       1/8 tsp. pepper

                                        3 Tblsp. olive oil

                            Whisk all together to blend.

 

Spiced Pecans:   5 oz. Pecans

                           1 Tblsp. melted butter

                           3/4 tsp. cumin

                           1 Tblsp. sugar

                           Pepper

          Mix together and bake 20 minutes at 300 degrees.

 

  Place Spring Greens on plate, add some dressing and toss.

Add raspberries and orange slices. Top with spiced pecans.

Add slices of chicken, warm or cold.

 

 I stored the remainder of spiced pecans in a glass jar to keep

them fresh.

Interesting!    I would put curry dressing on that, and serve with mango chutney, tho

@SportyShorty07   You are welcome. Once I had that in a seaside restaurant, I wanted to know to make it. I had been going there since 2000, every summer, for that salad. It is one of the most famous and popular items on their menu. It is now, double the price that it was in 2000.

 

   The waitress told me the ingredients for the nuts, but the dressing was a secret. I tried bottled raspberry dressings, but I don't like dressings that are thick with stabilizers or any that taste of onion.

  

    Then I found this dressing recipe online and it tastes close to the original salad dressing. I used Trappist raspberry jam, but I might try Smucker's to see if it has a more vibrant raspberry flavor.

 

    It is a quick, easy salad to put together, once you have the cooked chicken. It is only the nuts and dressing that take any time to prepare. You can do the nuts, the day before.

 

    It looks best, when you prepare each serving on separate plates, not in one big bowl.

 

     One package of Spring Greens was enough for four salads

and the dressing recipe is enough for four salads. (unless you like a lot of dressing)  Or, you could make three larger salads.

@Enufstuff I like how you replicated your favorite salad from the restaurant- that's absolutely something that I would do! I remember when Subway discontinued their oven roasted chicken breasts, I came up with a chicken breast spice rub that tasted even better and I created my own sub sandwiches at home.  My homemade subs have a toasted dutch crunch roll, grilled seasoned chicken breast, provologne, shredded lettuce, sliced tomato, pickle, mustard, salt and pepper, and a splash of red wine vinegar and olive oil. So good!  

 

    You're so clever to get the nut seasoning recipe from the waitress and make the dressing from scratch. I bet your salad is so delicious and the colors of the oranges, spring mix, chicken, pecans, and raspberry dressing must be so pretty.  I'm going to make your salad for lunch sometime in September! Thank you for telling me how many servings this makes- I'll think of you and smile when I taste the spectacular seaside salad that you created Smiley HappyHeart.

@Enufstuff   This sounds delicious.  I'm making it this weekend.  I always have cans of mandarin oranges, but the cups are a nice idea if I don't want to open a 15oz can.  Sounds so good.  The dressing sounds delicious, and I love crunch on a salad.  I do need pecans and raspberries.   Thanks so much for sharing.   I get a lot of value from a supermarket rotisserie chicken....
