You all have such good recipes! I buy pot pies from Schwans Home Delivery, but if their prices go any higher, I'll have to start making my own.

I love seeing all these recipes ! I just love chicken pot pie. I never made it until a couple years ago and we always had it at our favorite Irish pub.  I got a plain recipe from Betty Crocker so I could change it according to my families likes (who doesnt eat onions, who doesnt eat peas LOL).  I used leeks one time, added baby potatos and celery - came out yummy. Imade my own stock and use a roasted chicken from Costco Great time saver for busy life we all lead these days. Just want to share this for any newbies like me.

Classic Chicken Pot Pie

Ingredients

 

  • 1/3cup butter
  • 1/3cup all-purpose flour
  • 1/3cup chopped onion
  • 1/2teaspoon salt
  • 1/4teaspoon pepper
  • 1 3/4cups chicken broth
  • 2/3cup milk
  • 2 1/2to 3 cups cut-up cooked chicken or turkey
  • 1box (10 oz) frozen peas and carrots
  • 1box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
