Chicken Piquant

CHICKEN PIQUANT--serve w/ rice, 8 servings

 

8 chicken breast halves

1/4 cup packed light brown sugar

2 teaspoons ground ginger

1 teaspoon dried oregano

2 cups dry red wine

1/2 cup olive oil

1/2 cup soy sauce

1 garlic clove, minced

 

Arrange chicken in baking dish.  Mix all ingredients and pour over chicken.  Cover & refrigerate 2 hours.

 

Preheat oven to 350 degrees.

Bake, basting chicken twice, about 40 minutes.

Transfer to a platter, tent with foil.

 

Strain marinade into medium saucepan.

Reduce to 2 cups, about 20 minutes.

 

Pour half over chicken and pass the rest of the sauce at the table.

@novamc1   This looks delicious.  Other recipes online describe chicken piquant as a spicy Cajun dish with diced tomatoes and tomato paste or sauce.  But your recipe isn't spicy, would you agree?

If you look up the definition of "piquant", you'll see that it can refer to anything spicy, sharp or savory. 

 

It's not used exclusively to describe  spicy Cajun cooking.

Should have mentioned this when I posted the recipe, but it has been in my recipe archives for about 35 years.

 

I hand-copied it from a source that I don't remember and didn't write down.

 

We have enjoyed it on the rare occasions when I get around to making it.  It's one of  of many saved chicken recipes.

Not at all like the recipe I use. The one I have is from allrecipes.com and it's a spciy one. Not too hot but a great flavor. Love this one that I use.

Another "savory" Piquant Chicken recipe, if anyone wants to venture  beyond the many Cajun-style dishes.

CHICKEN PIQUANT- --savory, not Cajun or tomato-based

 

  • 2-2.5 pounds boneless skinless chicken tenders or breasts
  • 3/4 to 1 stick butter, melted
  • 3-4 cloves garlic, minced
  • 1-1/2 tsp salt
  • 2 tsp chili powder
  • dash pepper
  • dash dry mustard
  • 3 lemons, juiced
  • 2 tsp. Worcestershire sauce
  • Penzey's Arizona seasoning (optional but adds great flavor)
  •  
  1. Arrange chicken pieces in large glass baking dish; pat dry.
  2. Sprinkle both sides of chicken with Arizona seasoning, if desired.
  3. Mix melted butter, garlic, salt, chili powder, pepper, dry mustard, lemon juice, and Worcestershire.
  4. Dab butter mixture onto chicken pieces with a baster or pour over the pieces.
  5. Cover pan tightly with foil.
  6. DO AHEAD: If you want to cook later in the day, just stick in fridge until time to cook.
  7. Bake at 350 for about an hour and a half. Remove foil the last 30 minutes of baking.____________________________________
