Chicken Lasagna

1/2 cup butter

1/2 cup flour

1/2 teaspoon salt

1/2 teaspoon dried leaf basil

3 cups chicken OR vegetable broth

2 1/2 cups cooked chicken...diced

2 cups cottage cheese

1 egg...slightly beaten

8 ounces lasagna noodles...cooked and drained

1 (10 ounce) pkg. frozen chopped spinach...thawed and drained

4 ounces Mozzarella cheese...thinly sliced

1/4 cup Parmesan cheese...grated

Melt butter in a large saucepan. Add flour, salt and basil. Stir in chicken broth. Stir constantly til mixture thickens and comes to a boil. Remove from heat. Add chicken. In a bowl, mix cottage cheese with beaten egg. Lightly grease a 9x13 inch pan. Place 1/3 of the mixture on the bottom of the pan. Top with half the noodles, half the cottage cheese and egg, half the spinach and half the Mozzarella cheese. Repeat. Ending with the last third of the chicken mixture. Top with Parmesan cheese. Bake at 375* for 45 minutes. Remove from oven and let stand 10 minutes before cutting.

~~You can also make a meatless lasagna by omitting the chicken and chicken broth. Increase the amount of spinach used. If you want, add additional vegetables~~
