Chicken ChowMein Casserole
1 tablespoon butter
1/2 small red bell pepper, chopped
1 cup celery...sliced
1 - 2 cloves garlic, minced
1 (4 1/2ounce) can mushrooms...drained and sliced
1 can waterchestnuts...drained chopped
2 green onions, chopped
1 (10-3/4-ounce) can cream of chicken OR
cream of mushroom soup, undiluted
3/4 cup mayonnaise
1 tablespoon soy sauce
3 cups chopped cooked chicken
1/8 teaspoon black pepper
2 cups (canned) crunchy chow mein noodles
Preheat oven to 350* Melt butter in a large skillet. Add red bell pepper, celery and garlic. Saute until tender.
Add mushrooms and water chestnuts.
Stir in chopped green onions, soup, mayonnaise, soy sauce, chicken and pepper. Mix well.
Pour into a lightly greased oblong baking dish. Sprinkle top with chow mein noodles. Bake, uncovered, 30 minutes or until bubbly.

@LilBitMissty, thanks for your recipies! I've been sick on the couch for almost a week...super bad cold! I'm trying to bring myself back to life and find something that interests me to cook and eat. Your recipes are usually easy and tasty. Thanks for taking the time to share them here with us.

This is kind of a blast from the past - my mother used to make this for dinner. Hadn't thought about it in years.
