Cheezy Butterbeans - Diabetes friendly

I found this side dish recipe published by the Canadian Diabetes Assn. I was interested since my husband, sister and brother all have diabetes, so I copied it. I will use it the next time we are all together for a meal. Thought I would share with you until then. They say that it is a side dish or it can be served with a green tossed salad to make a full meal.

Cheezy Butterbeans (side dish)

4 cups frozen lima beans, thawed and drained
28 oz. can diced tomatoes, drained, 1/2 cup of the juice set aside
1/2 cup chopped green onions
1 tsp. salt
Freshly ground black pepper
1 green bell pepper, chopped
1 cup shredded cheddar cheese

1.) In a slow cooker, combine beans, tomatoes, 1/2 cup of the drained tomato juice, green onions, salt and black pepper to taste.
2.) Cover and cook on LOW for 6 hours or on HIGH for 3 hours, until hot and bubbly. Stir in green pepper and cheese. Cover and cook on HIGH for 20 minutes, until pepper is tender and cheese is melted.
Make Ahead:
This dish can be partially prepared before it is cooked. Complete Step 1. Cover and refrigerate overnight. Next morning continue with the recipe.
Note:
Works in slow cookers from 3-1/2 quarts to 6 quarts.
