I adapted this recipe from TOH magazine. I thought about browning the ham first but didn’t. I wished I had just because I prefer it that way, so I added that in the directions. I added the bell pepper and really liked the flavor that it added. Click Here for the original recipe.

Cheesy Ham and Noodle Bake

4 tablespoon butter

4 tablespoons flour (all-purpose)

pinch of salt

pepper to taste

2-1/2 cups milk

2 teaspoons prepared horseradish (optional)

1 tablespoon yellow mustard

half a 16 oz. bag of Kluski noodles

2 cups cubed fully cooked ham

1 cup cubed or grated co- jack or cheddar cheese

1/2 cup finely diced red bell pepper

1 cup soft bread crumbs

1-2 tablespoons melted butter

Prepare noodles in salted water as directed on package.

Brown diced ham in oil or bacon grease. Set aside. (I used 1 package of Frick’s ham steak).

In a large saucepan over medium heat, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Add horseradish and mustard; mix well. Stir in the cheese, then the diced pepper and ham. Pour into a greased 2-1/2-qt. baking dish. Bake at 350° for 20 minutes. Combine melted butter with bread crumbs. Sprinkle on top of noodles. Bake 20 minutes longer.
