Cheesy Bacon Brunch Casserole

Just tried this recipe over the weekend, and it is a great brunch dish. It's similar to a quiche, but instead of a pie crust, the egg mixture is poured over hash browns. You can always add different vegetables and replace the bacon with sausage (or omit meat altogether). Lots of possibilities!

Cheesy Bacon Brunch Casserole

8 slices bacon, chopped

2 c. frozen shredded hash browns, thawed

1/2 lb. fresh mushrooms, sliced

1 each red and green pepper, chopped

1 small onion, chopped

12 eggs

1/3 c. sour cream (I used light)

3/4 lb. (12 oz) shredded cheddar cheese

HEAT oven to 350 F

COOK bacon in large skillet on medium heat 10 min. or until crsip, stirring occasionally. Remove bacon from skillet, reserving 2 T. drippings in skillet. Drain bacon on paper towels. Meanwhile, add potatoes, mushrooms, peppers and onions to drippings; cook 10 min. or until peppers and onions are crisp-tender, stirring occasionally.

SPREAD vegetable mixture onto bottom of 13"x9" baking dish sprayed with cooking spray. Mix bacon and cheese with vegetables. Whisk eggs and sour cream until well blended; pour over vegetable mixture.

BAKE 40 minutes until center is set and casserole is heated through.
