Cheddar Ham Soup (for your Easter leftover ham)

HAM AND CHEDDAR SOUP--7 servings

 

2 cups diced peeled potatoes

2 cups water

1/2 cup sliced carrot

1/4 cup chopped onion

1/4 cup butter, cubed

1/4 cup all-purpose flour

2 cups milk

1/4 to 1/2 teaspoon salt

1/4 teaspoon pepper

2 cups (8 oz.) shredded cheddar cheese

1.5 cups cubed cooked ham

1 cup thawed frozen peas

 

In large saucepan, combine potatoes, water, carrot, onion.

Bring to a boil.

Reduce heat; cover and cook 10-15 minutes or until tender.

 

In another saucepan, melt butter.

Stir in flour until smooth.

Gradually add the milk, salt, pepper.

Bring to a boil; cook and stir for 2 minutes or until thickened.

Stir in cheese until melted.

Stir into undrained potato mixture.

Add ham and peas and heat through.

This is a very delicious soup.  I use unpeeled red potatoes and celery, replace the water with chicken broth, and prefer extra-sharp cheddar for extra tang.  I never thought to add peas.

Very much like your suggestion of  using broth instead of water. 

 

My own shortcut is a combination package of frozen carrots and peas, added at the end.  Small diced carrots can heat up just as fast as peas and don't need much cooking.

looks like a delicious recipe. the cheese, is it 2cups or is it 8oz? i cup is 8 oz.

I get the 8 oz packs of shredded cheese. It might actually equal two cups if packed loosely.

An  8-oz. package of shredded cheese at the grocery store provides  the same or virtually the same amount  as 2 cups of shredded cheese that you would shred on your own from a solid block of cheese.

 

If you prefer to shred your own, it shouldn't be firmly packed in the measuring cup (because it isn't firmly packed in the store-bought package), unless you just want extra cheese in your soup.

 

Who knows.........extra cheese might make the soup even better?  Haven't tried that yet.

Just happened to remember that some folks might mix up liquid vs. dry measures.

 

! cup of liquid = 8 ounces

--but--

8 ounces of shredded cheese is measured by weight, not volume.
