Hi wismiss, yes, a lot of restaurants and event places do use ready made large canned sauces. If you have a restaurant supply store around you, they would have it.

If you remember Lavendersage, who is missed and has not been here for some time, she had one posted that I made before. It is called "Nacho" , but I know I made it without the jalapeno as my kids would not like it. I turned out good.

Nacho Cheese Sauce

2 T. butter

2 T. flour

1 C. milk

5 slices American cheese

2-3 oz. sharp cheddar cheese, shredded (grate your own and don't use bagged, it has things added in it that keep it from melting/mixing well)

pinch of paprika

1 jalapeno, cut into rings

pinch of cayenne pepper

In a saucepan, melt butter and stir in flour, cook 1 minute. Pour in milk and add jalapeno, whisk until blended. Stir until thickens. Add cheese and spices, stir until melted. (helps to keep mixture warm, it thickens a lot as it cools)
