This amazing side dish can be done in the microwave while the oven is full of stuffing and rolls!

 

Created in the height of microwave cooking, this is SO good it survived!

 

 

Cauliflower Curry

 

1 lg cauliflower

2 Tbsp water

1 C Cream of Chicken soup

1 C Cheddar cheese, shredded

1/3 C mayonnaise

1 tsp curry powder 

2 tsp butter, melted

1/4 C bread crumbs

 

Cut cauliflower into serving size flowerettes

Pour the water over and microwave covered 7 minutes.

Drain

Combine soup, cheese, mayo, and curry in a bowl.

Fold in to cauliflower.

In a small bowl mix melted butter and bread crumbs, sprinkle over cauliflower.

Microwave 3 minutes

@ECBG I would love if I think if you substitute yellow or zucchini squash, spinach, potatoes and onion slices, or chicken or tuna for the cauliflower!  Woman Embarassed  Woman Frustrated

I like curry - mild.  Some can take the roof of mouth off and eyes to water up.  What level do you use b/c there are many factions on the market.  A little can go a long way.

Might just try this one b/c how much cauliflower can one eat at a sitting?  LOL

Indian food so good & interesting.

Absolutely!  I would cut up the squash in large cubes, make wider onion rings, and keep it all vegetable for compatable cooking times.  I'd put grilled chicken or fish on the side.

@ECBG  Do you think I could use a bag of frozen cauliflower instead?  I buy my groceries online, and don't have great luck with fresh produce.

Absolutely!  I would thaw first since time is for raw, not fresh.  Frozen can generally be used for fresh.Smiley Happy

@ECBG   Ok, what if you layered some breakfast-type ingredients in it like ham, sliced boiled eggs, cooked potatoes, etc. for a brunch style dish?  

 

Would that work?  Since I have never made it, it sounds like it would be good nudging it along toward that type of dish. . .like it is a sauce type thing. . . or do I have it all wrong?

 

Some of those British brunch dishes that incorporate curry, eggs and sometimes rice gave me the thought that possibly it would be good along those lines.  Without taking all day to do it!

I see what you're saying.  You just have enough sauce for the cauliflower.

 

The sauce wouldn't move around because of the solid layers you were thinking of.  You would have two layers of solid sauce, then the other items in layers under that.
