Well I just had another casserole fail . I swear I always think that the recipe sounds delicious and I'm always disappointed. I will say that I'm done  but then I will be tempted by a colorful picture and a list of ingredients that sound tasty. I'm a pretty good cook, so maybe I just don't like casseroles. Are you a fan, and if so what are your go to concoctions ?

Not a fan of casseroles but make a lot of sheet pan meals. They tend to come out ok and you can see how everything is cooking and monitor cooking time and any seasoning adjustments.

I really like your quote about your own opinion but not your own facts.  I'm going to write it down.  When I worked as an RN and we were always short staffed, I found a quote and my supervisor kept it on her white board in her office.  It was "I can do anything, I just can't do everything."  My PCP wrote it on his Board in his office.

I make three casserole dishes on rotation.  They always get eaten, even the left overs and my DH usually doesn't eat left overs.

 

All three recipes came from the internet.  My mother never made casseroles, so I didn't have any experience with them....except for lasagne and other pasta dishes.

 

They are:

 

1. Cottage Pie

2. Tuna noodle casserole

3. Ground Beef Noodle casserole.

I can commiserate!  It's happened to me with casseroles and other dishes I tried.  The recipe and ingredients look good, you go through all the trouble of making it only to be sorely disappointed.  It just happened to me a week ago.  I had never eaten hominy.  Had to order it from Amazon because I couldn't find it locally. Cooked up the recipe I saw that looked good, and it tasted like musty dirt!  Blech! What a let down!  Threw it all down the garbage disposal.  

 

I don't think it has anything to do with you liking casseroles.  The recipes just weren't good.

I love casseroles, unfortunately my DH doesn't like at all.  It's rare I make a casserole.

 

Have also tried some recipes that didn't turn out good at all after reading the recipe's ingredients, such a waste.  

 

Won't make a new recipe without reading reviews and they have to be generally very high.  I have better luck with those.

@LdyBugz   That's because hominy smells and tastes like dirt.  My DH buys it alot to put in his omelet and I sure don't want it in mine.

I love casseroles because I'm lazy.  I'm alone so if I make one, I can eat it for 4 or 5 days and only have to cook once.

 

I make the pretty ones from ads, usually online but then I add my favorite things like lots of green chili, salsa, maybe artichoke hearts, sliced water chestnuts or green or black olives and nearly always cheese and maybe fried canned onions or Chinese noodles, to name a few.

@KathyM23  Thank you for saying that!  I thought I had done something wrong or it was just a bad can of hominy!  When I read info about it, I thought to myself that it's just corn so it should be good. Boy was I wrong.  I guess it's an "acquired taste".   Glad to know it wasn't me, so thank you!
