@RedTop I agree with you--and we aren't real fond of lots of cheese or sour cream, cream cheese, etc. 

 

So rather than a casserole, we will make a skillet or one-pot meal with meat, rice, veggies and tomato.  It can be Italian, Mexican, or Middle East spiced with much the same ingredients: Meat, onion, bell pepper, tomatoes, celey, broth and lots of spices.

 

They are usually with rice in the pot, but sometimes noodles.  Maybe including yellow squash, zucchini, mushrooms, asparagus and/or eggplant, and lots of lime or lemon juice!

I'm going to make this. Easy and ingredients in the house except for chicken. Dh from mid west, so..he loves casseroles. We never had them in my house. Dad was a no nonsense guy...meat and potatoes!

My favorite casserole is from the can of Carnation evaporated milk.  The recipe calls for cilantro and diced jalapenos, which may automatically make it a non-starter for some.

 

Chicken & Rice Casserole

 

INGREDIENTS

  • 2 cups cooked rice
  • 2 cups (8 ounces) shredded Monterey Jack cheese
  • 1 1/2 cups cooked, chopped chicken breast meat
  • 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk
  • 1/2 cup finely chopped red onion
  • 2 large eggs, lightly beaten
  • 1/4 cup finely chopped cilantro
  • 2 tablespoons butter or margarine, melted
  • 1 tablespoon diced jalapeños (optional)

 

Step 1

Preheat oven to 350° F. Lightly grease 2-quart casserole dish.

Step 2

Combine rice, cheese, chicken, evaporated milk, onion, eggs, cilantro, melted butter and jalapeños in prepared dish; stir well.

Step 3

Bake for 45 to 50 minutes or until knife inserted in center comes out clean.

Step 4

For Freeze Ahead: Prepare as above; do not bake. Cover; freeze for up to 2 months. Thaw overnight in refrigerator. Uncover. Preheat oven to 350° F. Bake for 60 to 70 minutes or until knife inserted in center comes out clean.

 I did not have them growing up at all so I do like them. There is a thread started by Bellabutterfly in 2016 called

DH grew up in a large family with very little money. Casseroles were daily weeknight dinners. Loves any casserole, but I don't make them often. Closest thing would be lasagna or chicken enchiladas.
