Casseroles Always A Crowd Pleaser...

[ Edited ]

I thought I would start a New Thread..."Just Casseroles"

With the holidays just around the corner.  Many will be entertaining out of town family and guest.  Along with being invited to "Pot Luck" Holiday Parties.  What better way to feed a crowd and transport to a party than a "Casserole".

I personally love "Casserole's", there are hundreds of recipes out there for them.  So lets have some fun and share with everyone your "Best Casserole".

Blessings to you and yours this "Holiday Season".

Chicken Cordon Blue Casserole

MAKES: 2 ( 13 x 9 inch Casseroles)
***Note to just make 1 casserole , cut all ingredients in half.

Ingredients

  • 2 packages (6 ounces each) reduced-sodium stuffing mix (prepare stuffing mix  according to box directions)  I personally use "Stove Top"
  • 2 cans (10-3/4 ounces) low sodium condensed cream of chicken soup, undiluted
  • 2 cup 2% milk
  • 10 cups cubed cooked chicken breast
  • (Saute chicken in a little oil on stove top)
  • 1/2 teaspoon pepper
  • 1 pound cooked deli ham, cut into chunks (ask if they have low sodium ham)
  • (Ask the deli person for 1 lb cooked ham slab, so you can cut into chunks)
  • 2 cup shredded swiss cheese
  • 2 cups shredded monetary jack cheese
  • (save some cheese to sprinkle on top of casserole)

Directions

  1. Preheat oven to 350°. Prepare stuffing mixes according to package directions.
  2. Meanwhile, whisk together soup and milk.
  3. Toss chicken with pepper; divide between two greased 13 x 9 inch baking dishes. Layer cooked chicken, ham, cheese and stuffing .
  4. Pour soup and milk mixture over entire casserole. Sprinkle tops with remaining  cheese.
  5. Bake, covered, 30 minutes. Uncover.  Uncover and bake additional 10 to 15 mins until cheese is melted and golden brown on top.

  1. Freeze option: Cover and freeze unbaked casseroles. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, covered, until heated through and a thermometer inserted in center reads 165°, about 45 minutes. Uncover; bake until cheese is melted, 10-15 minutes. Yield: 2 casseroles (6 hearty servings each).

@Bellabutterfly, I have a tried a Chicken Cordon Blu recipe similar  to yours and it is delicious!  I, too, love casseroles, and this is a great idea, I will have to get my recipes out and post some favorites of mine!

Re: Casserole's Always A Crowd Pleaser...

Nice idea for thread, Bellabutterfly.  This recipe is a good one to have on hand as people arrive from out of town....or anytime!

Spaghetti Bake

1 1/2 lbs. ground beef

1/2 cup chopped onion

1 clove garlic, minced

1  28 oz. can diced tomatoes

1  15 oz. can tomato sauce

1  4 oz. can sliced mushrooms, drained

1 teaspoon dried basil

2 teaspoon brown sugar (or more 😀)

1 1/2 teaspoons oregano

2 cups shredded mozzarella (or less)

1/3 cup Parmesan cheese

8 oz. spaghetti, broken, cooked and drained

In large pan like Dutch Oven, cook meat, onion and garlic until onion is tender.  Drain off fat.  Add undrained tomatoes, tomato sauce, mushrooms, brown sugar, oregano and basil.  Bring to a boil.  Boil gently uncovered for 20-25 minutes stirring occasionally.

Stir in cooked spaghetti, then layer 1/2 spaghetti mixture in 9x13" pan.  Next, layer 1/2 of mozzarella cheese, top with remaining spaghetti mixture.  Follow with remaining mozzarella and sprinkle the Parmesan cheese on top.

Bake at 350 for 30 minutes.  Let stand a few minutes before serving.  Can freeze.
