Carrot Jello Salad (Sunshine Salad)

1 (6 oz.) package orange, lemon or lime jello
1 (20 oz.) can crushed pineapple,
*drained with juice reserved *
3 carrots, finely grated
1/2 cup finely chopped celery
*optional

I think some toasted, finely chopped pecans are a nice addition too.


In a large bowl, prepare the jello according to package directions using reserved pineapple juice in place of some of the water. (I use orange jello and pineapple in heavy syrup- there was 1 cup of juice reserved for the 1 cup of cold water for the jello) Refrigerate until thickened somewhat- about 1 hour.
When jello has thickened, stir in pineapple, shredded carrots and celery, if using. Cover and refrigerate until set, at least 4 hours.
