Here's a recipe for biscotti given to me by a dear elderly Italian friend/former co-worker. Her children made this recipe of biscotti to be served at the get-together after her memorial service, and it was nice to have the memory of her biscotti there with us. I was lucky (and honored) that she gave me her recipe before she passed away. I think it was meant to be shared! Enjoy!

Carmel’s Italian Biscotti

1 cube butter

1 cup sugar

½-teaspoon baking powder

2 ½ cups flour

2 Tablespoons vanilla or 1 teaspoon anise

3 eggs

1 cup sliced almonds with skins (toast almonds in oven, about 7 minutes)

Work and cream butter until creamy.

Add sugar and mix well.

Add eggs, one at a time, mixing well after each.

Add flour a little at a time, after sifting together with baking powder.

Add anise/vanilla and almonds.

Flour hands, and place mixture onto a floured board.

Divide mixture into two equal amounts.

Make two rolls 10 inches long and 1 ½ inches thick.

Place the rolls onto a greased cookie sheet.

Bake at 350 about 25 minutes, or until slightly light brown.

Let stand 5 minutes; slice crossways.

Return cookies to oven to lightly brown both sides.
