Does anyone know if you can mix up the cannoli filling ahead of time........say like 2-3 days ahead?  Of course I don't plan to fill them until Christmas day.  There is always so much to do last minute that this would help, but if not, it's okay.  Thanks in advance!  Merry Christmas!

@Patriot3 - Yep, you can totally make the cannoli filling in advance and keep it in your refrigerator until you're ready to use it. As you noted, you definitely wouldn't want to put it in the shells beforehand since they'd be a soggy mess. Good luck!

P.S. Warning: It is dangerous to keep prepared cannoli filling in your refrigerator because it is extremely tempting...  Smiley Happy

@Patriot3 .... YES ..... you definitely can prepare the cannoli filling ahead of time .... in fact you can freeze it & take it out of the freezer a day before you need it .... I buy the cannoli cream from an Italian specialty store who sells it before the holidays .... it’s delicious 😋

There is a family owned diner near me called Ponzios who are known for their freshly made daily cannolis.  Everytime I go there I ask to speak w/the ancient Italian lady dressed in her morning black dress & vail they got stashed in the cellar making Canollis.  I want to thank her & hail.gifat her feet.

Really missing cannoli since I moved to Tennessee.  Visiting NJ for the holidays and want cannoli.  Is Ponzios in NJ by any change?  I am willing to travel!
