Re: Can you share your "favorite" ambrosia salad -- made without nuts

[ Edited ]

Thank you everyone for the recipe.  My friend told me the walnuts give it nice taste.  As I said, not my go to dessert so what I'm going to do make it and put nuts on the side.  If they like them they can top their own.

Taking this "off topic" a bit -- thank you for the accolades for hosting this luncheon!!!  I've been in this neighborhood 5 years today & the most I've said is "hi" (although sometimes they don't acknowledge but that's ok) to those who are walking or just passing by.

The neighborhood is "turning" now as the older are passing and

moving which is a good thing.  My good friend from up north bought the home across the street, she is a single lady and I thought it would be a nice "gesture" to host so she could meet some our neighbors (me too for that matter).  I don't know the other new neighbors either😉

I was happy to "personally" deliver the invitation

instead of putting in mail tube  & meet the few new ladies (and spouses) in the neighborhood.  Of course, the ones who have been my "neighbors" for 5 years well let's just say "no rsvp as yet" and I did give directly to them.   That's fine!

My neighbor on both sides are "snowbirds" they  said we've  been here 10 + years & no one has invited us to anything.  Well, there's a first for everything, right!

It was funny the neighbors (who I've known) seemed "surprised" I was hosting in my home vs. clubhouse.  Some asked can I bring my spouse?  Heck no -- it's for ladies only!!!

I'm looking forward to it and I'm hoping now that "younger" neighbors are moving in maybe it will be different...then again, who knows maybe they said "yes" cuz they want to see what I did in the house with the remodel or if I'm a good hostess (or cook!).  LOL...either way I like entertaining so it's good for me!

this is very good. Boop

  • 1-1/2 cups cold 2% milk
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 carton (8 ounces) frozen whipped topping, thawed
  • 4 large apples, chopped (about 6 cups)
  • 4 Snickers candy bars (2.07 ounces each), cut into 1/2-inch pieces

Directions In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in whipped topping. Fold in apples and candy bars. Refrigerate until serving. Yield: 12 servings (3/4 cup each).

Test Kitchen Tips
  • Using crisp, tart apples like Granny Smiths helps to balance the sweetness.
  • For a pretty presentation and a bit of extra crunch, sprinkle chopped peanuts over the top.

Re: Can you share your "favorite" ambrosia salad -- made without nuts

For Easter Sunday the only fresh fruit in my salad were the green grapes.  The rest was a can of pineapple chunks, mandarin oranges, sliced peaches, and sliced frozen strawberries (defrosted of course), and a half package of coconut.  Drained as well as I could mixed with half a container of Cool Whip light and a half a container of Yoplait French Vanilla yogurt.  Family consumed all in one meal no leftovers.

Re: Can you share your "favorite" ambrosia salad -- made without nuts

Mine is similar to a couple of recipes posted, but I use more mandarin oranges and pineapple:

2 cans - 8 oz pineapple chunks, drained

2 cans - 11 oz mandarin oranges, drained

1 cup mini marshmallows

1 cup shredded coconut

8 oz. sour cream.

Gently mix all together, but fold in mandarin oranges last.

Chill before serving.

Re: Can you share your "favorite" ambrosia salad -- made without nuts

When I was a little girl my grandmother would make ambrosia for Christmas. She used fresh oranges, pineapple, cherries, and coconut. Fresh fruit makes a wonderful light dessert.

Re: Can you share your "favorite" ambrosia salad -- made without nuts

I  have never added marshmallows to my ambrosia:

5 oranges

2 grapefruit

4 cups fresh pineapple cut into 1/2" cubes

5 tbsps confectioners' sugar

1 cup heavy cream

1/2 cup sour cream

1/2 tsp vanilla

1 1/2 cups sweetened shredded coconut, toasted and cooled

Grate 1 tsp zest from orange and save for later.  Remove sections from orange and grapefruit halves.

Gently toss fruit and 2 tbsp sugar in bowl.  Place fruit mixture in colander to drain liquid for 1/2 hour, stirring occasionally.

Whisk cream, sour cream, 3 tbsps sugar, orange zest, and vanilla with electric mixer on medium-low until foamy.  Increase speed to high and whip into stiff peaks.  Gently fold fruit mixture, whipped cream mixture, and coconut together in large bowl.
