Calling experienced cooks! Need your help please

I have a dear young friend who is going back to teaching this year. She asked me if I had any super easy one dish meals she could prepare quickly when she gets home. I thought I must have some, but I really don't have that many. Would you mind sharing your tried and true, super easy and fast one dish meals? I think she is looking for something that would be complete alone, or that she could serve with just a green salad. Thank you!
