My apologies for this late response but I just saw it yesterday! It is my pleasure to share this recipe with you per your request, but as an experienced cook, you will likely tweak it to your liking as I did. This is the exact recipe .😊 It is pretty basic from Marlene Wyatt's Favorite Foods From The Ozarks cookbook.
Southern Style Chicken & Dumplings:
1. 4 Cups All Purpose Flour
2. 1 tablespoon of salt
3. 1 1/2 sticks of butter or margarine
4. 1 whole chicken cut up
Boil chicken in large pot until done. Remove chicken and continue to boil broth. Mix flour and salt; add butter or margarine. Strain 2 cups of boiling broth. Pour over flour and butter mixture ( no need to blend butter and flour; just pour broth directly over mixture.) Mix until dough leaves side of bowl. GENEROUSLY flour No Mess Dough Disc and roll out to 1/8 inch thickness using between a quarter and third of the dough at one time. Cut into 3" inch squares and drop into boiling broth. (I cut them in a diamond pattern) After all dumplings are submerged, simmer for 15-20 minutes, stirring occasionally. Add chicken meat to dumplings and broth.
My two cents:
I use a teaspoon or so of chicken boullion in the boiling water with the chicken, but feel free to leave it out . I also add carrots and celery, or peas sometimes. You can add herbs ( I like a bit of finely chopped rosemary and thyme) salt, pepper, garlic powder and or onion powder to taste if you prefer. I like to add it. I also add chopped onion sometimes.
As an experienced cook, you will DEFINITELY tweak it to your liking, but I am certain you will LOVE IT once you do! I make it during the cold months for my family, but I just enjoy the broth with dumplings. You will have a bowl of thick, hearty chicken & dumplings. Pretty much the way I've always made them except for the butter I just use couple of eggs, flour, salt, and canned chicken broth.
I done have the chicken pressure cooked in the pressure cooker for 40 minutes. Take chicken out
and cut some of it off put back in pressure cooker
I have to pressure cook my dumplings because they're to thick hahhahaha just not rolling out thin enough.
pressure cook for 5 to 7 minutes.
I use the rest of the chicken for chicken salad. That stuff you buy at the grocery is terrible. The restaurents have all kinds of junk in their chicken salad.
walnuts
cranberries
pecans
fruit Ewwwwww ! As usual if you want something done right you have to do yourself.

I LOVE❤️ the idea of using a pressure cooker for the chicken, and just might use it!😊 I also like the idea of using the leftovers for chicken salad. My family will benefit from that!

Pressure cooker is the quickest, easiest way to get cooked chicken meat. I use it often and also for dumplings but I much prefer the fluffy, biscuit type that are steamed in the broth. I can't even eat the Southern style dumplings. Doughy.

@Kachina624 Welcome!🥰 I have never had the biscuit type, but am now curious to try some. I think I will research a recipe. I do not eat meat, but cook the chicken and dumplings for my family. For me, the dumplings and broth are the best part!😊

@Nightowlz Welcome!🥰 You are missing a treat! Everyone has their own special way of preparing them, but when done right, they are quite delicious! Some are overcooked to the point of being hockey pucks!😁

@SandySparkles @SharkE : Another poster @Carmie: Suggested using - With my back problems , using what ever is easier. I put this in my grocery order today. I will probably use a deli chicken and can chicken broth.

@SouthernBee Welcome!🥰 What an EXCELLENT idea! I was not aware dumplings could be purchased prepackaged. I LOVE💖 Marlene's version with a bit of tweaking, but will certainly consider the idea of having these on hand to try when I am short on time!😊
