Hi Baxjaxmon! Here is the recipe for my Quick & Easy Lemon Bars. I hope you enjoy them as much as my family does.
QUICK & EASY LEMON BARS
INGREDIENTS:
1 (16 ounce) Angel food cake mix
1 (22 ounce) can Lemon pie filling
1 cup shredded coconut (optional)
DIRECTIONS:
1. In a mixing bowl, combine cake mix, pie filling and coconut. Stir until thoroughly mixed. (Do not add any liquid).
2 Spread this mixture in a 10 x 15 inch baking pan (I sprayed my pan with Pam for baking). Bake for 30 minutes in a preheated 350 degree oven. Cool.
You can frost or sprinkle with powdered sugar.
Here is the frosting recipe that I like to use on these bars.
FROSTING:
INGREDIENTS:
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
2 1/2 cups powdered sugar
1 teaspoon vanilla
Lemon zest, for garnish
DIRECTIONS:
1. Cobine all ingredients until blended will.
2. Frost cake and garnish with sprinkles of lemon zest. Cut into bars.
3. Cover and refrigerate overnight for better flavor.
