Sounds delicious but I need some info......

CABBAGE PICKLE

2 cabbage heads, medium
4 – 6 carrots
4 red peppers
4 green peppers
12 onions

Chop all together. Add ½ cup salt and let stand for 2 hours. Drain.

Mix:
1 quart vinegar
2-4 cups sugar
1 Tablespoon mustard seed
1 Tablespoon celery seed

Pour over drained vegetables. Process hot water bath in hot sterile jars, for approximately 15 minutes.

I would like to make 1/4 of this. Can I follow the recipe and SIMMER in a pot for 15 minutes?

I think it would work; what do you think? Any other suggestion? TIA

So are you making a smaller amount so you don't have to water bath process it? I wouldn't simmer it 15 minutes... It will get too limp....water bath canning is not like simmering...maybe 5 minutes max....

I want to make less because there is only 2 of us. I canned once, but it has been toooo long ago for me to remember much about it. This sounds similar to a Chow-Chow relish I used to make, just sounds fresher.

I think I just found an answer! This is called Cabbage Salad from a person in Canada.

"Mix liquids and bring to boil. Boil hard. Pour over veggies while hot. Mix well. Let cool and then sit in refrigerator overnight." Gonna try it!

I wouldn't simmer it either, just follow the directions. Of course you will have to refrigerate it because its not "canned." I have a recipe like this that I haven't made in years because I remember it gave one terrible bad breath. I'll have to dig it out and see if your recipe might avoid this problem.
