2 t butter
2 cups zucchini, chopped
1 cup onion, chopped
1/2 cup yellow bell pepper, seeded and chopped
1-1/2 cups plum tomatoes, seeded and chopped
1 t brown sugar
3/4 t curry powder
salt and pepper to taste
1 T Parmesan cheese, grated
Melt butter over low heat in a large skillet. Add zucchini, onion and yellow pepper. Saute until just tender. Add tomatoes, brown sugar, curry powder, salt and pepper. Mix thoroughly. Cover and cook for two minutes. Sprinkle with Parmesan cheese and serve.
