I have my favorite way to make egg salad but I saw this on-line  and it sounded good to me and it was.  Nice to have a variety.

 

8 hard boiled eggs, diced
1/3 cup mayo
1/2 T fresh lime juice
1/2 t Madras curry powder or more to taste
1 t mustard
1 med Granny Smith apple, diced
1/4 cup red onion, finely diced.
1/4 cup chopped fresh cilantro (optional)

 

Mix mayo, lime juice, curry and mustard until well combined.   Add to diced eggs, apple, onion and cilantro (if using). Stir until combined. Add salt and pepper to taste.

 

I did not add the cilantro because I did not have any.  If you did not have a red onion I think a couple of chopped green onions would work.  We ate this with crackers and it was delicious.  I also added a little extra mayo at the end.  I think I had very large eggs.

looks like a keeper! I am intrigued by the addition of apple.

I finallly tried this recipe. Like I thought it would be, it is a definte "keeper"! Letting it sit overnight only made it better. I used a mild curry, not Madras. Awesome and easy!
