A favorite of mine is "The Italian Slow Cooker" (MIchele Scicolone)....many great recipes....just a few of my favorites are... "Tuscan Seafood Stew"..."Turkey Meatball and Escarole Soup" (you can use Chicken or Beef also)...Lamb Stew with Sun-Dried Tomatoes...many wonderful recipes with great pictures.

It's by Nicole Sparks and Jenna Marwitz.

 

Most recipes use simple ingredients and don't require a lot of food-prep time.  I have enjoyed using this book over the last few years.
