CROCKPOT BEEF VEGETABLE SOUP
1 ½ LB. stew beef, cut into small pieces
1 Bag frozen mixed vegetables
1 green bell pepper, chopped
1 onion, chopped
1 ½ C. water
1 tsp. salt
¼ tsp. pepper
32 oz. beef broth
2 cans diced tomatoes with roasted garlic
1 can tomato sauce
Mix ingredients in crockpot, cover, and cook on low for 9-10 hours.

Thank You for posting this I am going to try it. I was just thinking about soups and stews for this Fall earlier today that I could do in the crockpot and then I came on and saw this! I love to have things like that cooking on a cool day and serve them with some good bread and cheese.

Love this dish and will make it as soon as we get a cooler spell in the weather.
I tend to load it up with plenty of extra mixed frozen vegetables, plus fresh sliced carrots, celery and onion, and then I "pollute" it with lots of evil additives.
I usually wind up with a concoction that is somewhere in between a soup and a stew.
My evil, sodium-laden flavor enhancers might include one or more (and sometimes all) of the following:
Worcestershire sauce
Can of Campbell's tomato soup, undiluted
Envelope of Lipton's Beefy Onion or plain onion soup mix
Ketchup
Bring on some fall weather!!

Made my first batch of chili for the season and will do beef vegetable next.

@novamc1 I like to finish off my soup/stew with the fluffy, biscuit style dumplings. You can steam them very easily in a pressure cooker after it has switched to warm. I get it simmering and drop in the dumplings then put the lid on loosely.
