CORN & BLACK BEAN SALAD

1- 15 OZ CAN OF WHOLE KERNEL CORN, DRAINED

2- A 150Z CAN BLACK BEANS, RINSED AND DRAINED

3- 1 MED. RED PEPPER CHOPPED

4- 1 MED TOMATO, SEEDED AND CHOPPED

5- 6 GREEN ONION SLICED THIN

6- 1 JALAPENO PEPPER SEEDED AND FINELY CHOPPED (OPTIONAL)

7- 1 GARLIC CLOVE, MINCED

8- ¾ CUP ITALIAN SALAD DRESSING

9- 1 TABSP MINCED FRESH CILANTRO (OPTIONAL)

10- JUICE OF ½ LEMON or LIME

11- 2 TEASP CHILI POWDER

12- 2 TEASP CUMIN

13- ¾ TEASP HOT PEPPER SAUCE (OPTIONAL)

In a large bowl combine first eight ingredients. In a small bowl combine salad dressing, cilantro, lemon or lime juice, hot pepper sauce and chili and cumin powder. Pour over corn mixture and mix. Place in a sealed bowl and refrigerate 8 ors or overnight.
