COLE SLAW RECIPES I GOT FROM YOU LADIES AND LOVE

We love coleslaw, and here's one that's a little bit different. Also, it seems to hold up better than most... it doesn't wilt fast.

16 oz. bag of coleslaw mix

11 oz. can of Mandarin oranges, drained

2 sliced green onions

6 oz. Yoplait 99% fat-free Key Lime Pie yogurt

1/4 cup mayonnaise (I use lite mayo, Kraft or Hellman's)

1 tsp. grated lime peel

1 TBS. lime juice

1/4 cup whole cashews (we use walnuts for heart health)

In a large bowl, mix coleslaw, oranges and onion. In a smaller bowl, mix yogurt, mayo, lime peel and lime juice. Fold into the coleslaw.

Refrigerate 15 minutes to blend flavors. Just before serving, sprinkle with cashews or walnuts.

COCONUT AND PINEAPPLE COLE SLAW POSTED BY BOBY



1 head green cabbage, shredded
1 large carrot, shredded
2 cups fresh chopped or 1=15oz can crushed pineapple
1/4 cup grated unsweetened coconut OR 1/4 to 1/2 cup BAGGED
1/4 cup golden raisins
1 cup mayo (I USED LIGHT MAYO, KRAFT OR HELLMAN'S)
1/2 cup chopped macadamia nuts PECANS Or WALNUTS

1)Mix all ingredients together, refrigerate 1 hour, and serve.

TRIPLE FRUIT COLESLAW = DON'T REMEMBER WHERE I GOT THIS ONE <br /> <br /> 1=16 oz bag of coleslaw mix or broccoli slaw<br /> 1=8 oz can of pineapple tidbits in their own juice(reserve juice)can use rings and cut into pieces<br /> 1 large apple cut into cubes<br /> 1 cup chopped celery<br /> 1/2 cup dried cranberries, raisins or craisins (I USED BLUEBERRIES) <br /> 1 cup light mayo(NOT fat free)<br /> 2 TBSP unseasoned rice vinegar<br /> 3 TBSP reserved pineapple juice(more if needed later)<br /> <br /> Combine coleslaw mix, pineapple, apple, celery and dried cranberries, raisins or craisins in a large bowl and mix well.<br /> In a small bowl blend light mayo, vinegar and pineapple juice.<br /> Add mayo mixture to cabbage mixture and toss gently until well mixed.<br /> Cover and chill for several hours. Serves 8 to 10

this is another old recipe I found , I've found a lot of peach recipes , and thought I'd post this one I haven't tried it because my picky eaters won't eat coleslaw so I'd have to eat this all by my myself
if you try I hope you enjoy, I just thought it was so different

Peachy Coleslaw

dressing
1 cup 2% OR REDUCED FAT cottage cheese
1/2 cup LIGHT mayonnaise
2 tablespoons honey
1/4 teaspoon celery seed
1 tablespoon RICE vinegar
1 teaspoon dry mustard
1 teaspoon each salt and pepper

mix well set aside

in large bowl mix
4 cup cabbage , shredded
2 carrots, shredded
1/2 small sweet onion, sliced separated into rings
1/2 cup almonds
1 cup raisins

mix well and add the dressing just before serving add

2 cups peeled , diced ripe peaches serve immediately
( this does not keep well with the peaches added )
YOU CAN ALSO USE BLUEBERRIES OR STRAWBERRIES BUT IF USING ANY FRUIT IN THIS YOU MAY WANT TO CUT DOWN THE RECIPE SINCE IT DOESN'T KEEP WELL WITH THE FRUIT IN IT.
