CHINESE FIVE SPICE ROASTED BUTTERNUT SQUASH

One of my favorite incredibly easy sides.  

 

2-1/2 to 3 pounds cubed butternut squash
2 T olive oil
1 t Kosher salt
1/2 t freshly ground pepper
1-1/2 t Chinese five spice powder (or to taste)

1 T maple syrup

 

Preheat oven to 400 degrees.

 

Toss squash and all other ingredients in a large bowl.  Arrange on a cookie sheet.  Place in oven and roast for 30-35 min or until tender. 

 

I usually buy the package of pre-cubed squash at the store and half the recipe.

I have a parsnip and sweet potato that I think I will try using this recipe---doesn't that sound yummy??

so the parsnip/sweet spud with the 5 spice was delicious altho I added a touch of brown sugar to it just for a touch more sweetness!! yummy!
