Yes if it sits over night it will thicken up but I have used masa too.

We prefer a lot of liquid with our chili; we don't want it to have the consistency of stew.

@SoonerLOL well I'm taking the risk of being kicked out of TX by saying this, but I add beans to my chili also. This wacky way of cooking can be seen in us TX natives who are the offspring of northern native parents.
try the pumpkin - it's good.

I would have poured off some of the liquid and boiled it down to thicken it before returning it to the pot.

@ECBG That's too simple. Better to add pumpkin, beans, crackers and masa but it's what I would do too.
@yellowrose The whole 35 years I lived in Texas, I put beans in my chili. Don't like it without them. I never got used to potato salad made from MASHED potatoes that they always served at catered barbecues though.
