1-1/2 cups flour
2 T sugar
1 T baking powder
1 t salt
1/2 cup salted butter (cut in small pieces)
2 large eggs + 1 egg for egg wash
2/3 cup buttermilk
2/3 cup grated sharp cheddar cheese
1/4 cup chopped chives
Additional grated cheddar to top scones

 

375 degree oven

 

Put flour, sugar, baking powder, salt and butter into food processor and pulse until crumbly.  Put in large bowl.

 

Whisk 2 eggs and buttermilk.  Add to flour mixture.  Stir till just moist.  Stir in the cheddar and chives.  Mix lightly.  

 

Turn dough out on well floured board and knead lightly.  Cut dough in half.  Pat each half into a circle about 3/4 inch thick.  Cut each circle into 4 wedges.  Place on parchment paper lined baking sheet.  Whisk additional egg and brush on top of the scones.  Let rest for 10 minutes.  

 

Sprinkle each scone with an additional tablespoon of grated cheese.  

 

Bake for about 20 minutes.  

 

I am planning to use these to accompany a bowl of soup.  I could definitely see using other cheeses for a variety.

I have buttermilk to use up and these will be different than biscuits!

That is why I tried this recipe - that pesky leftover buttermilk.

 

I heated one of the scones up at 300 for 9-10 minutes for breakfast this morning.  Tasted great.
