CAROL1229's BANANA BANANA NUT BREAD! SO MOIST!!!

Hi everyone, I would like to bump up a Banana Bread Recipe posted by Carol1229 a while ago. I finally had a chance to make it this weekend and it was incredible! Never in my life have I tasted such a moist banana bread! It was almost like cake! Rave reviews from all our guests. Thank you Carol!! You always make me look so good!!

BANANA BANANA NUT BREAD

1 c. sugar
8 oz. (2 sticks) butter, softened at room temperature
1 1/2 c. ripe bananas, mashed (about 4 medium)
1 c. buttermilk
3 large eggs
1 tsp. vanilla extract
1 (3 1/2 oz.) box instant banana pudding mix
1/2 tsp. salt
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. ground cinnamon
3 c. all-purpose flour
1 c. chopped pecans

Preheat oven to 300 degrees. Grease (2) 9x5-inch loaf pans*.

Cream butter and sugar well. Add bananas, buttermilk, eggs and vanilla; mix well.


Add instant pudding, salt, baking powder, baking soda, and cinnamon, mixing well.


Slowly add flour, one cup at a time, until well mixed. Add pecans and mix until blended.

Pour batter into prepared pans and bake for ** 65 minutes or until toothpick inserted into the center comes out clean. *Respectlife used regular loaf pans and they only took 55-57 mins. Depending on your oven, I agree w/ Carol's note below to check much earlier. Oh, and I added chocolate chips! hee hee!

*I always use mini loaf pans....I started testing it around the 30 minute mark...it took between 30-45 minutes in the mini pans.
