CARAMELIZED ONION DIP

2 T butter
2 yellow onions, cut in small dice
Kosher salt and black pepper to taste
8 oz cream cheese, softened
1 cup sour cream
2 T chopped fresh chives

 

Melt butter in large skillet over med heat.  Add onions, salt and pepper.   Cook until deep golden brown (about 30 minutes) stirring occasionally.  If they are browning too fast turn temp down.  Remove from heat and let cool.

 

In a bowl mix rest of ingredients together.  

 

Serve with vegetables or crackers.

I have another carmelized onion dip with bacon and gruyere which is amazing, but time consuming.  I plan to try yours!  Thanks!

My recipe for caramelized onion dip replaces the cream cheese with Greek yogurt and adds a touch of white vinegar.

Looks like a great easy one! 

 

I have a  very similar one calling for caramelizing sweet Vidalia onions in a slow-cooker overnight and using Gruyere cheese, plus some apple cider vinegar and your listed ingredients.

 

I'm sure Swiss cheese would be a fair substitute for Gruyere if necessary.

 

Love caramelized onions.  I make and freeze them in small quantities to serve with certain meats.

sounds great---love  caramalize onions---but learned a little trick to it---just after they start to turn color, I add a small amount of water to the pan and for some reason, they do even better and don't get sticky or too browned. Can't tell you where I read this but have used this a few times with great results.
