CARAMEL PUFF CORN

 

1      { 8 OZ } BAG CHESTERS PUFF CORN

        I USED TO BAGS OF THE PUFF CORN

1      CUP BUTTER

1      CUP BROWN SUGAR

1/2   CUP LIGHT CORN SYRUP

1      TEASPOON BAKING SODA

 

Place Puff Corn in a large roaster pan.

In a 2 quart sauce pan bring the butter, sugar and corn syrup to a

boil.  Cook to HARD CRACK STAGE.

Add the baking soda.  This will cause the caramel mixture to

foam up.

Stir well and remove from heat.

Pour over Puff Corn in roaster pan and bake in 250° oven for 45-50 minutes.

Stirring every 10 - 15 minutes.

Remove from oven.  Spread out onto waxed paper to cool.

Store in air tight container.

I make this every Christmas, fill clear bags & tie with bows. 

It is the most delicious treat. EVER.

I make this for my GD every Xmas.  She expects it.  If she doesn't see it, then I get the stink eye.

I love the idea of this. What does the baking soda do?  Does it sort of turn the caramel into peanut brittle texture? I'm terrible at desserts that's why I ask.

I just bought Halloween treat bags and I'm making this to fill them!  My recipe is slightly different but this stuff is addicting!  I was the school secretary at a high school in a small town in Kansas and one of my office aides gave me this for Christmas!  I had never even noticed the puff corn in the grocery store before!

I'm on the west coast and have never seen this brand of puffed corn.  I looked it up and there are several flavors.  Does this recipe call for the butter flavor one?

@NorthernLights Maybe someone has the chemical answer, but when I add the baking soda it makes the caramel get all foamy & easy to spread all over the corn.

@BaileyBop I use Mike Sells brand & I use the Original (They do have a butter flavor, as well.).

I have also used this with Chex cereal, because the Puff Corn is fairly high in fat. 

The Puff Corn definitely is the most delicious, but it's pretty good with cereal as well.

The recipe that I have did not call for a flavor.  Wen I found it at

Wal-Mart they had butter and cheese flavor.  I chose the butter

as the cheese did not appeal to me for this recipe.

 

We just can't seem to get enought of this recipe to eat.  I have

already made 3 batches since I found the recipe.

 

It is worth the try.  I know you will like it.

I hate to say this but I don't know what the baking soda does other than

maybe it makes it easierr to coat the Puff Corn.

 

All I can say is this recipe is great and a keeper for sure
