My Favorite Beans ~ LilBitMissty

1 lb. ground beef
3/4 lb. bacon, diced
1/2 c. ketchup
1/2 c. brown sugar (or to taste)
2 tsp. vinegar
1 tsp. salt
1 tsp. prepared mustard
1/4 medium onion, chopped
2 (16 oz.) cans pork and beans
1 (15 oz.) can kidney beans, drained
1 (15 oz.) can butter beans, drained

In a large skillet over medium-high heat, cook ground beef and bacon; drain well. Saute onions. Meanwhile, in a small bowl whisk together ketchup, brown sugar, vinegar, salt, and mustard. In a slow cooker, pork and beans, kidney beans, butter beans, meat mixture, onions and sauce.  Mix well.  Cover and cook on low for 4 hours or until heated through. 
***You could also cook in oven at 350* for 45 minutes brown meat and cook bacon before baking.

FRUITY CASSEROLE from lilbitmissty

1 large orange or 2 small oranges, peeled and thinly sliced
1 stick butter
1/3 cup flour
1/2 cup sugar
Dash salt
1/2 cup coconut
1 can sliced pineapple, halved, reserve juice
1 can pear halves, quartered and drained
1 can peaches, quartered and drained
1 small jar maraschino cherries, reserve juice
Preheat oven to 375 degrees.

Melt butter. Add oranges, flour, sugar, and salt. Cook until thickened and oranges are tender; adding juice from pineapple and cherries as it cooks.
Add coconut.

Arrange drained fruits in large casserole dish. Pour oranges in sauce over other fruits.

1 POUND GROUND BEEF
1/4 CUP CHOPPED ONION
1 1/2 CUPS WATER
SALT AND PEPPER TO TASTE
1 20 OUNCE CAN CREAM CORN
4 OUNCES PACKAGED NOODLES
1/4 CUP CHOPPED BLACK OLIVES
1 CAN TOMATO SOUP
1 CUP GRATED CHEESE

BROWN MEAT WITH ONIONS. DRAIN. ADD SOUP, WATER AND UNCOOKED NOODLES OVER LOW HEAT. STIR OFTEN AS THE NOODLES WILL STICK. WHEN THE NOODLES ARE TENDER ADD THE CORN, OLIVES AND 1/2 OF THE CHEESE. POUR INTO A 9 INCH SQUARE PAN OR CASSEROLE DISH. TOP WITH REST OF THE CHEESE. BAKE AT 325* FOR 30 MINUTES

Hamburger Chili Chip Casserole ~ LilBitMissty

1 pound ground beef

1/4 cup celery..diced

1/4 teaspoon pepper

1 teaspoon salt

1 cup corn chips

1 cup cheese...cut into SMALL cubes

1/4 cup minced onion

1 1 pound can chili con carne with beans

Brown meat. Add onion and celery and cook til tender but not brown. Season with salt and pepper. Add chili and mix. Place a layer of corn chips in a greased casserole dish. Alternate layers of chili mixture, corn chips and diced cheese, ending with corn chips. Bake at 350* for 10 minutes or til hot all the way through.

Hamburger Logs ~ LilBitMissty

1 pound ground beef

1 pound pork sausage

2 cans chicken rice soup

3 eggs

1/4 teaspoon pepper

1 teaspoon salt

1/2 teaspoon poultry seasoning

2 cups fine bread crumbs

1 can cream of mushroom soup

corn flakes...crushed

Mix all of the above EXCEPTfor the mushroom soup and the corn flakes. Form into logs about the size of hot dogs. Roll logs in crushed corn flakes then brown in hot oil. Place in a 9x13 inch baking pan. Mix mushroom soup with a soup-can of water. Pour over logs and bake at 350* for 1 hour. This makes approx. 23 logs. If choose, you can make these up ahead of time and refrigerate. When you have them refrigerated, they will take just a bit longer to cook.

Hash Brown Casserole ~ LilBitMissty

Preheat oven to 350*

1 - 32 oz. hash browns...southern style

1 stick butter... melted

1/2 cup chopped onions

1 teaspoon salt

1/2 teaspoon pepper

1 can cream of chicken soup

2 cups sour cream

2 cups cheddar cheese


1 pkg. onion and garlic croutons

1 stick butter... melted


Mix first 8 ingredients together. Pour into 9X13 baking dish. Crush croutons and mix with butter. Put this on top of casserole.
Bake, covered, at 350 degrees for 1 hour.
Uncover last 15 minutes.
Can divide into 2-3 casseroles before baking and freeze. If freezing, do not put crouton mixture on top.

~~~Instead of the croutons and butter on the top, you could use crushed potato chips. I have also used crushed "Funions"~~~

Hash Brown Quiche ~ LilBitMissty

3 cups shredded hashbrowns thawed and drained on paper towels

4 tablespoons butter, melted

3 large eggs , beaten

1 cup half and half

3/4 cup cooked diced ham

1/2 cup diced green onions

1 cup shredded chedder cheese

salt and pepper to taste

Pre-heat oven to 450, mix butter and hashbrowns and press in a 9 in pie plate or springform pan and pop in oven for 20-25 min.
In the meantime mix the rest of ingredients and when crust is done add the mixture and bake at 350 for 30 minutes or till lightly browned and crispy on on the outside.

 I have been making that for a long time myself . They replaced the original recipe and put a recipe for vegetable lasagna on the back of the box. I really feel this is the recipe you are looking for.....Hope it looks familiar!!

Italian Lasagna ~ LilBitMissty

1/2 of a (1-pound) package Creamettes lasagna, uncooked

1 lb bulk Italian sausage

1/2 lb ground beef

1 cup chopped onion

2 cloves garlic, minced

1 (28 oz) can tomatoes, cut up UNDRAINED

2 (6 oz) cans tomato paste

2 tsp sugar

2 tsp salt

1 1/2 tsp basil leaves

1/2 tsp fennel seed

1/4 tsp pepper

1 (15 oz) container ricotta cheese

1 egg beaten

1 tbsp parsley flakes

1/2 tsp salt

1 cup sliced pitted ripe olives

4 cups of shredded mozzarella cheese

3/4 cup grated parmesan cheese

Prepare lasagna according to package directions, drain.
In large skillet, combine Italian sausage, ground beef, onion, and garlic. Cook until sausage is no longer pink and onion is tender; drain. Stir in next 7 ingredients. Bring to boil. Reduce heat, simmer 20 minutes. In medium bowl, blend ricotta, egg, parsley, and salt. Spoon 1 1/2 cups of meat sauce into 13 x 9 inch baking dish. Layer one-third each lasagna, remaining meat sauce, ricotta mixture, mozzarella cheese, and Parmesan cheese. Repeat layers. Cover. Bake in 375 * oven for 25 minutes. Uncover, bake until hot, about 20 minutes longer. Let stand 10 minutes before cutting. 8-10 servings

1 green pepper...diced

1/2 onion...minced

1/2 cup butter

1 can cream corn

1 can whole kernel corn...drained

1 egg 1 box jiffy corn muffin mix

1 pint sour cream

2 cups sharp cheddar cheese...grated

Saute green pepper, onion and butter. Mix all ingredients together and place in a 9x13 inch pan. Spread sour cream evenly over top and then sprinkle the top with cheese. Bake at 350* for 30 minutes.

Macaroni And Cheese Vegetable Style ~ LilBitMissty

1 1/2 cups elbow macaroni..UNCOOKED

3 cups fresh broccoli florets

2 cups fresh cauliflowerets

3 large carrots..cut in half lengthwise then sliced thinly

2 celery ribs..sliced

3/4 onion..chopped

1 tablespoon butter

1/4 cup flour

1 cup milk

1 cup chicken broth

3 cups grated sharp cheddar cheese

1 tablespoon dijon mustard

1/4 teaspoon salt

1/8 teaspoon pepper

1/4 teaspoon paprika

Cook macaroni according to package directions. Add broccoli, cauliflowerets, carrots and celery during the last 6 minutes. Drain and transfer to a greased 13 x 9 inch baking dish./ In a dutch oven or large pan, saute onion in butter til tender. Sprinkle with flour, stir til blended. Gradually stir in milk and broth. Bring to a boil. Cook and stir for 2 minutes or til thickened. Stir in the cheese, mustard, salt and pepper. Pour over macaroni mixture. Stir to coat. Sprinkle with paprika. Bake uncovered at 350* for 15 - 20 minutes or til heated through.

1 lb ground beef

1/2 cup chopped green pepper

1/2 cup chopped onion

1 8oz can tomato sauce

1 6oz can tomato paste

1 1-1/2 oz pkg taco seasoning mix

1 tsp chili powder

1/4 cup water

1 cup sour cream

2 eggs...beaten

1 tsp pepper

6 8inch flour tortillas

3/4 cup shredded cheddar

3/4 cup shredded monterrey jack

Pre-heat oven to 350 * Grease a 9 x 13 baking dish, In a saute pan brown ground beef, green pepper and onions and drain. Mix tomato sauce, paste, taco seasoning, chili powder and 1/4 cup water. Add to ground beef and stir. In another bowl combine sour cream, eggs and pepper. Layer beef mix and tortillas 1/3 at a time in baking dish starting with beef and ending with beef. Top with sour cream mixture. Spread evenly, then sprinkle both cheese's over the top and bake for 30 minutes.

1 pound sausage

1/2 of a green pepper..diced

1/4 cup onion..diced

1 cup uncooked macaroni

1 teaspoon salt

1 8 ounce can tomato sauce

2 tablespoons sugar

2 teaspoons chili powder

1/2 cup sour cream

american cheese..grated

Brown sausage with onions and pepper. Drain Add all ingredients EXCEPT the sour cream and cheese. Simmer about 10-15 minutes stirring til macaroni is tender. Add sour cream and sprinkle the cheese on top. Cover to melt cheese.

NO NAME CASSEROLE from lilbitmissty

10 lasagna Noodles
1 egg
1/2 tsp. onion salt
1 c. shredded cheddar cheese
2 c. mashed potatoes
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. butter
3/4 c. chopped onions

Cook noodles as directed on package. Drain. Line bottom of 9 x 13" pan with noodles. Mash potatoes with cheddar cheese,
egg,onion salt, pepper and salt. Spread over noodles.
Cover with another layer of noodles. Melt butter in pan, sauté onions in butter until transparent and soft. Pour over noodles, cover and bake for 30 minutes at 350*
Let stand for 10 minutes before cutting. Serve with sour cream.
Serves 6-8.

1 pound ground beef
1/4 cup onion...diced small
1/2 cup green pepper...chopped
1 cup celery...chopped
2 tablespoons oil
3 cups canned tomatoes with juice
1 small can mushrooms...drained
salt & pepper to taste
1 Tablespoon chili powder
2 cups UNcooked noodles
1 can kidney beans...drained
1 small can corn
cheddar cheese...grated

Put oil in skillet. Brown beef with onion, green pepper and celery. Add tomatoes with juice, drained mushrooms and seasonings. Mix well. Add UNcooked noodles and drained beans. Drain the corn, but reserve the liquid. You might need to add some of the liquid if mixture becomes a little dry. simmer 15 minutes or til noodles are cooked. Add corn (and liquid if needed). Heat through for 5 more minutes. Top with cheese as you serve.

ORANGE BAKED BEANS ~ lilbitmissty

1 16 OUNCE CAN BAKED BEANS
2 TABLESPOONS BROWN SUGAR

1 TABLESPOON UNDILUTED FROZEN ORANGE JUICE
1 TEASPOON BUTTER OR MARGARINE

GREASE 7 INCH CASSEROLE DISH. DRAIN A LITTLE LIQUID FROM THE BEANS INTO THE CASSEROLE DISH. ADD THE BROWN SUGAR, KETCHUP, MUSTARD, ORANGE JUICE CONCENTRATE AND THE BUTTER. MIX WELL. ADD BEANS AND REMAINING SAUCE. STIR TIL WELL BLENDED. BAKE UNCOVERED FOR ABOUT AN HOUR. STIR A COUPLE TIMES DURING BAKING.

***THIS CAN BE MIXED AHEAD AND BAKED LATER. ALSO..WHEN I MAKE THIS, I SLICE SOME HOT DOGS AND ADD TO IT.***

OVERNIGHT BREAKFAST CASSEROLE from lilbitmissty

1/2 cup butter divided
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 cups milk
1 cup shredded American cheese
1 cup cubed fully cooked ham
1/4 cup sliced green onions
12 eggs beaten
4 ounce can sliced mushrooms drained
1-1/2 cups soft bread crumbs

In a medium saucepan melt 2 tablespoons butter.
Add flour, salt and pepper then cook and stir until mixture begins to bubble.
Gradually stir in milk and cook until thickened and bubbly stirring constantly.
Remove from heat.
Add cheese and mix well then set aside.
In a large skillet saute ham and onions in 3 tablespoons butter until onions are tender.
Add eggs then cook and stir until they begin to set.
Add mushrooms and cheese sauce and mix well.
Pour in a medium baking dish.
Melt remaining butter then toss with bread crumbs and sprinkle over top of casserole.
Cover and refrigerate for 3 hours or overnight.
Bake uncovered at 350 for 30 minutes.
Sprinkle with additional onions.

GARLIC SALT TO TASTE
SALT TO TASTE

CUT PORK INTO BITE SIZE PIECES. SAUTE TIL BROWN. DRAIN. SLICE ONION AND BELL PEPPER INTO 1/2 INCH ROUND SLICES. ADD ONIONS, BELL PEPPERS, TOMATO SAUCE AND PINEAPPLE TIDBITS WITH JUICE TO PORK. ADD ENOUGH WATER TO PAN TO COVER. STIR IN VINEGAR AND BROWN SUGAR. COMBINE CORNSTARCH WITH JUST ENOUGH WATER TO MOISTEN. STIR INTO STEW. MIX WELL ADD GARLIC SALT AND SALT TO TASTE. BRING TO A BOIL. REDUCE HEAT . SIMMER COVERED FOR ABOUT AN HOUR STIRRING OCCASIONALLY.

1 pound ground beef

3/4 onion..minced

1 clove garlic

1 envelope spaghetti seasoning mix

1 15 ounce can tomato sauce

1/2 cup water

1 8 ounce pkg. grated Mozzarella cheese


Pop Over Batter

2 large eggs

1 tablespoons oil

1 cup milk

1 cup flour

1/2 teaspoon salt

1/2 cup Parmesan cheese

Crumble beef and brown with onion and garlic. Drain. Add spaghetti seasoning mix, tomato sauce and water. Simmer 10 minutes. Spoon mixture into baking dish. Top with Mozzarella cheese. Keep hot in oven 375*. Make batter by beating together the eggs, milk and oil with mixer. Add flour and salt. Mix til smooth. Remove filling from oven and pour batter over filling, being sure to cover entire surface. Sprinkle the top with Parmesan cheese. Bake 30 minutes. The batter will puff way up while it bakes...just like a popover does!! Kids love to watch it while it bakes. Once it is done and you go to cut it..it will deflate and is easy to serve.

Pork Casserole ~ LilBitMissty

4 slices pork steak

5 celery stalks...diced

1/2 of an onion...diced

1 green pepper...chopped

2 tablespoons butter

1 can pineapple tidbits

2 tablespoons vinegar

2 tablespoons brown sugar

2 tablespoons soy sauce

Cut pork steaks into small pieces. Brown. Take out of pan and set aside. Saute celery, onion, and green pepper in the 2 tablespoons butter. Drain juice from pineapple and then put the juice in with the vegetables. Add vinegar, brown sugar and soy sauce. Add pineapple to the vegetables. Put meat in a baking dish. Pour vegetable mixture over the meat and bake at 250* for 2 hours.

Pork Chop And Apple Bake ~ LilBitMissty

6 loin pork chops 3/4 inch thick

1/2 cup brown sugar

1/3 cup soy sauce

1/2 teaspoon ginger

salt and pepper

2 apples ...cored and sliced 1/2 inch thick

1/2 cup apple juice

3 tablespoons catsup

2 tablespoons cornstarch

Preheat oven to 350*. Place chops in a shallow pan (sprayed with pam) and bake 1 hour. Sprinkle the chops with salt and pepper. Top the cooked chops with the sliced apples. In a pan, combine remaining ingredients. Cook til sauce thickens. Pour the sauce over apples and cook another 30 minutes, basting frequently.

6 boneless pork chops

2 tablespoons oil

2 cans cream of mushroom soup

8 ounces sour cream

1/2 cup milk

1 32 ounce bag frozen hash browns

2 cups cheddar cheese...grated and divided in half

1 can french fried onion rings

Brown chops in oil. In a bowl, combine soup, sour cream and milk. Stir in potatoes and 1 cup of the cheese. Spread this mixture in the bottom of a greased 9x13 inch pan. Arrange pork chops on the top. Bake covered at 350* for 1 1/4 to 1 1/2 hours. Uncover and sprinkle with remaining cheese. Top with onion rings. Return to oven and bake til cheese is melted and the onion rings are hot.

1 CUP GRATED CHEDDAR CHEESE

PUT CABBAGE IN A 9X13 INCH PAN. BROWN BEEF AND ONION. WHEN BEEF IS COOKED ALL THE WAY POUR THE SPAGHETTI SAUCE OVER IT. ADD RICE AND WATER. STIR TIL BLENDED. POUR OVER CABBAGE. BAKE AT 350* FOR 35-40 MINUTES. TOP WITH CHEESE AND SERVE.

COOK RICE-A-RONI PER PKG. DIRECTIONS. SPREAD ON THE BOTTOM OF A 9 X 13 INCH PAN. NEXT LAYER CHICKEN THEN THE VEGETABLES. MIX TOGETHER SOUP, MILK AND MELTED BUTTER. POUR OVER CASSEROLE. TOP WITH CHEESE AND CRUSHED CORN FLAKES. COOK AT 350* FOR 40 MINUTES.

Sausage Casserole from lilbitmissty


1 pkg. smoked sausage or polish kielbasa
1 32 oz pkg. frozen hash browns
2 c. sour cream
1 can cream of celery soup
1/2 c green onions
1/2 c. milk
1 1/2 c. grated cheese
1/4 tsp. pepper
1/4 tsp. garlic powder

Slice sausage into 1/4" pieces. Mix soup, sour cream, onions, milk and spices.
Place in greased 9X13 pan 1/2 pkg. hash browns. Place sausage on top of hash
browns and pour half of soup mixture over sausage. Sprinkle with 1 cup of cheese.
Top with rest of potatoes, remaining soup mixture and top with remaining cheese.
Bake at 350 degrees for 45 minutes. Cover with foil for the first 30 minutes then
remove foil.
Serves 10-12.

1 14 3/4 ounce can cream corn

1/2 cup crushed saltines

1/4 cup butter...melted

1/4 cup carrots...grated

1/4 cup green pepper...chopped

2 tablespoons celery...chopped

1 teaspoon onion...chopped

1/2 teaspoon sugar

1/2 teaspoon salt

1/2 cup cheddar cheese...grated

In bowl combine all ingredients EXCEPT CHEESE . Mix well. Transfer to a quart size casserole dish. Sprinkle cheese on top. Bake uncovered at 350* for 30-35 minutes, or til knife inserted near the center comes out clean.

1 pound can tomatoes

4 slices toast..cubed

1 tablespoon onion...minced

1/4 cup butter

1 cup Mozzaralla cheese...cubed

1 cup Cheddar cheese...cubed

1/2 teaspoons salt

1/4 teaspoon pepper

Combine tomatoes, toast, onion, butter, cheeses, salt and pepper. Put in a 2 quart casserole dish. Bake uncovered at 375* for about 20 minutes.

Sesame Chicken ~ LilBitMissty

4-6 boneless chicken breasts

1 egg

1/4 cup corn starch

3 tablespoons sugar

3 tablespoons catsup

1 tablespoon white vinegar

1 1/2 teaspoons sesame oil

dash of pepper

2 green onions...chopped

sesame seeds

cooked rice

First cut chicken into small pieces. Lightly beat egg and then add chicken. Mix well to coat. Stir in the cornstarch. Heat oil to 350* or a bit higher. Deep fry til light brown. Drain chicken on paper towels. Heat 1 tablespoon oil in a wok over medium heat. Mix sugar, catsup, vinegar, sesame oil, garlic and pepper in a bowl. (If you want more sauce double or triple the sugar, catsup, vinegar, sesame oil, garlic and pepper.) Add sauce to hot oil. Stir constantly. As soon as the mixture begins to caramelize, add chicken. Toss to coat. Sprinkle sesame seeds over the chicken. Serve with cooked rice and stir fried vegetables.

***When I make this, I triple the sauce, as I like extra sauce to go over the rice***

1 10 3/4 can cream of celery soup

1 pint sour cream

1/2 cup butter...melted

1 sleeve round buttery crackers...crushed

2 15 ounce cans shoepeg corn...drained and divided

1 13 ounce can French cut green beans...drained

1/2 cup onions...chopped

1 5 ounce can water chestnuts...drained

1 cup sharp cheddar cheese...shredded

Combine soup and sour cream in a small bowl, set aside. In a separate bowl, blend together butter and cracker crumbs, set aside. In a greased 9x13 inch baking pan, layer as follows:

1 can corn

green beans

remaining corn

onion

waterchestnuts

cheese and soup mixture

Top with crumb mixture. Bake uncovered at 350* for 25 minutes. Remove cover and bake an additional 20 minutes. Serves 10.

REMOVE THE PULP FROM THE TOMATOES. BE CAREFUL NOT TO BREAK THE SHELLS. SET PULP ASIDE. PUT THE SHELLS IN A 1 QUART SHALLOW BAKING DISH. SET ASIDE. MELT MARGARINE IN A SKILLET. ADD ONION, CELERY AND GREEN PEPPER. SAUTE OVER LOW HEAT FOR 5 MINUTES. CUT UP SHRIMP. ADD THE TOMATO PULP AND THE CUT UP SHRIMP TO THE VEGETABLES. ADD THE BREAD CRUMBS, WORCESTERSHIRE SAUCE, SALT, PEPPER, AND DILL WEED. MIX WELL AND FILL EACH SHELL WITH 1/4 OF THE MIXTURE. TOP EACH WITH THE GRATED CHEESE. BAKE AT 375* FOR ABOUT 20 MINUTES.

bacon..about 12 slices
1 pound lean ground beef
1 cup chopped onion
1/2 cup brown sugar
1 tablespoon mustard
2 cans pork and beans
1 can lima beans or butter beans... drained
1 can kidney beans... drained
1/2 cup ketchup
1 teaspoon salt
1 tablespoon vinegar

Cook bacon til crisp. Brown ground beef, drain then add chopped onions. Saute 3-4 minutes. Put in slow cooker with remaining ingredients; cover and cook on LOW for 3 to 5 hours.

Sour Cream Noodle Bake ~ LilBitMissty

1 8 ounce package medium noodles

1 pound ground beef

2 tablespoons butter

1 teaspoon salt

1/2 teaspoon pepper

1/4 teaspoon garlic salt

1 8 ounce can tomato sauce

1 cup creamed cottage cheese

1 cup sour cream

2 green onions...chopped

3/4 - 1 cup cheddar cheese...chopped

Cook noodles in boiling salted water til done. Drain. Brown meat in butter. Drain. Add seasonings and tomato sauce. Simmer 5 minutes. In a bowl, combine cottage cheese, sour cream, onions and noodles. In a baking dish. alternate layers of noodles mixture and meat, beginning with noodles and ending with meat. Top with cheese. Bake at 350* for 25 minutes.

Southern Black Eyed Peas from lilbitmissty

1 pound dried black eyed peas
1 large onion
1 large ham hock
2 to 4 slices cooked bacon
1 large onion
1/8 teaspoon cayenne pepper or to taste
1/2 teaspoon garlic powder or use 1 fresh clove garlic, minced
1/2 teaspoon salt

In a large saucepan, cover peas with water to 3 inches over the peas. Bring to a boil, reduce heat, then simmer for 45 minutes to 1 hour. Place ham hock, sliced onion, bacon, pepper, garlic and salt in crockpot. Pour in 3 cups water. Cover and cook on high until peas are tender and ready to go in. When peas are tender, transfer to the crockpot. Reduce heat to low; cover and cook for 7 to 9 hours. Taste and adjust seasonings. Serve with hot cornbread. Serves 6 to 8.

Top-Ramen Casserole ~ LilBitMissty

1 1/2 pounds ground beef OR ground chicken

1/4 yellow sweet onion..minced

1 garlic clove...minced

1 1/4 cups buttermilk OR milk

2 eggs

1/2 cup Bisquick

1 package Top-Ramen soup (you choose flavor)

2 cups cheddar cheese

1/2 teaspoon pepper

Hot Sauce to Taste ...optional)

Fried Onion Rings... (optional)

Preheat oven to 350*. Boil water then cook the Top- Ramen noodles for about 2 minutes. Drain. In a large skillet over medium heat, brown meat, add onion and garlic and Top-Ramen flavoring packet and pepper. While cooking meat mixture, mix buttermilk, eggs and Bisquick and hot sauce. Continue cooking meat mixture until done.Put meat mixture in a casserole dish. Pour Bisquick mixture over meat mixture in baking pan. Top with cheese and cook in oven for 30 minutes. Five minutes before it finishes, top with fried onion rings.

Veggie Bean Casserole ~ LilBitMissty
2 cans pinto beans...drained and rinsed
1/2 cup cream cheese
1 cup plain yogurt or sour cream
1/2 cup grated Jack cheese
1 Tbs. olive oil
1 1/2 cups chopped onion
2 cloves garlic...minced
Sea salt, to taste (about 1/2 tsp.)
1/2 tsp. ground cumin
1/2 tsp. dried basil
1/4 tsp. cayenne pepper or less...to taste
Black pepper, to taste
1 medium zucchini...cut in chunks
2 medium tomatoes...chopped
salt, pepper, oregano, and basil (dash or so of each... to taste)
Preheat oven to 375*
Warm the pinto beans in a saucepan until just heated
through. Remove from heat. Stir in the cream cheese
so it melts, then stir in the yogurt/sour cream and cheese.
Saute the onions, garlic, salt, pepper, cumin, basil
and cayenne in the oil until onions are soft. Add this
to the bean mixture, stirring to combine.
Pour this mixture into a buttered 8 inch square pan.
In the same skillet, saute the zucchini with the seasonings.
You shouldn't need more oil, but add some water if it gets
too dry. Cook about 3 minutes and then add the tomatoes.
Cook for another 5 minutes. Spread this mixture on top of
the bean layer.
Bake 40 minutes or till bubbly.

Combine all ingredients and refrigerate overnight.

2 6 1/2 ounce cans water chestnuts...drained

1 pound bacon

12 ounces catsup

1/2 cup sugar

1/2 cup brown sugar

juice from one lemon

2 tablespoons Worcestershire sauce

2 tablespoons dark molasses

Cut bacon in half then wrap around whole water chestnuts. Secure each one with a toothpick. Place chestnuts on a roasting rack and cook til bacon is crisp. ( Broil for about 5 minutes then turn over and broil for another 5 minutes) Just keep a close eye on them! Mix remaining ingredients together and put in pan. Place the chestnuts in this sauce and cook til it's thoroughly heated. About 20 minutes or so in a 350* oven

2 tablespoons cocoa

1 cup powdered sugar

1/4 cup Bailey's irish cream

2 tablespoons light corn syrup

2 1/2 cups vanilla wafers, crushed fine

1 c. chopped pecans

powdered sugar

Sift together cocoa and powdered sugar. Combine and stir bailey's irish cream with light corn syrup. Add and mix vanilla wafers and chopped pecans.
Roll ingredients together into balls.
Dip each ball into powdered sugar, or put them in a plastic bag and shake them in the powdered sugar.

Makes about 25

Baked Potato Wedges ~ LilBitMissty

4 large baking potatoes

1/4 cup butter...melted

1/4 cup catsup

1 teaspoon prepared mustard

1/4 teaspoon paprika

1/4 teaspoon salt

1/8 teaspoon pepper

Scrub potatoes and pat dry. Quarter each potato. Cut each potato crosswise into 1/4 inch slices cutting to but NOT through the bottom of the potato. It should resemble a fan. Place each potato wedge skin side down on a large baking sheet. Set aside. Combine butter and remaining ingredients. Stir well. Brush tops and sides of the potatoes with 1/3 of the butter mixture. bake uncovered at 425* for 35-40 minutes. Baste occasionally with remaining butter mixture. Makes 8 servings.

Ingredients:
15 cups popped popcorn
1 cup brown sugar, packed
1/2 cup butter
1/4 cup cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda


Directions:
Preheat oven to 200*

Place popcorn in very large roasting pan or divide popcorn between 2 rectangular 9 x 13 inch pans.

Heat brown sugar, butter, corn syrup and salt in 2-quart saucepan over medium low heat, stirring occasionally, until bubbly around edges. Continue cooking 5 minutes without stirring; remove from heat. Stir in baking soda until foamy.

Pour sugar mixture over popcorn; toss until evenly coated. Bake 1 hour, stirring every 15 minutes. Spread on aluminum foil or cooking parchment paper to cool. Cool completely, about 30 minutes. Store tightly covered at room temperature.

Meatballs ~ LilBitMissty

2 lb ground beef
1 cup Italian seasoned breadcrumbs
2 eggs
1 tsp of fresh minced garlic
1/4 cup Parmesan cheese

Sauce
16 oz can jellied cranberry sauce
12 oz chili sauce
1 tbsp brown sugar
1 tbsp lemon juice

These are so sweet, tart and tangy all at the same time - really yummy! Just mix all ingredients for meatballs, make up small meatballs and pan fry or bake for about 30 minutes at 350* ....(I pan fry them).
Mix and heat all ingredients for the sauce, bring to a slight bubbling boil stirring often until all well blended. Put cooked meatballs into a crock pot, pour sauce over the top. Keep on low until serving time.

You can also make them the day before so the meatballs have time to marinate in the sauce. Then just put them in the slow cooker to heat. These can also be made then frozen.

1/2 cup cheese crackers, like cheese-its
3 tablespoons pizza sauce
3 tablespoons mozzarella cheese, shredded
6 black olives, sliced
6 pieces pepperoni, sliced into strips

Spread the cheese crackers evenly on an oven proof dish

Layer the sauce, cheese, olives, and pepperoni on top of the cheese crackers.

Place in a toaster oven or oven at 350 degrees until the cheese is melted.

SPICY SAUSAGE SNACKS from lilbitmissty
Say that fast 3 times! 

1 16oz can jellied cranberry sauce
2 Tablespoons spicy brown mustard
1 Teaspoon lemon juice
1 pound cooked smoked sausage
1 20 oz can pineapple chunks..drained
1 large green pepper seeded and cut inti 1/2 inch strips

Mix together cranberry sauce. mustard, and lemon juice in a saucepan. Cook stirring constantly over medium heat until smooth. Cut sausage into 1 inch slices and add to the cranberry sauce and cook for 15 minutes. Thread the pineapple, green pepper, and sausage chunks on skewers. Pour sauce into a shallow heatproof serving dish and arrange sausage kabobs in sauce.(I do mine around the edge of a bowl.)

You can prep the berries and make the filling the day before. Fill the strawberries about 4-5 hours before serving.

20 large, fresh strawberries, divided

1 (3 oz.) package cream cheese, softened

2 T. finely chopped walnuts or pecans

1 and 1/2 T. powdered sugar

1 tsp. orange liqueur, or orange juice, optional

Dice 2 strawberries and set aside. Cut a thin slice from stem end of each remaining berry, forming a base for it to stand on. Cut each berry into four wedges, starting at pointed ends and cutting to, but not through stem ends. Beat cream cheese at medium speed with electric mixer until fluffy. Stir in diced berries, walnuts, powdered sugar, and if desired, liqueur. Spoon or pipe about 1 tsp. mixture into each berry

1 (16 ounce) bag pretzel sticks

4 cups pecan halves

4 cups corn chex cereal

4 cups salted cashew halves

1 cup butter

1 cup powdered sugar

1/2 cup brown sugar

2 teaspoons cinnamon

Combine pretzels, cereal and cashews. Put in slow cooker. Melt butter in a saucepan. Stir in both kinds of sugar and cinnamon. Stir til blended. Drizzle over mixture in slow cooker. Cook UNcovered for 2-3 hours on high til mixture is "glazed". Cool on paper towels. Store covered in airtight container.

1 cup instant potato flakes

1/3 cup grated Parmesan cheese

1/2 teaspoon celery salt

1/4 teaspoon garlic powder

1/4 cup butter...melted and cooled

2 eggs

4-5 cups raw bite size veggies (mush rooms, peppers, broccoli, cauliflower, zucchini and/or PARBOILED carrots)

Prepared ranch dressing or a veggie dip is optional

In a small bowl, combine potato flakes, Parmesan cheese, celery salt, garlic powder and cooled melted butter. In another bowl beat eggs. Dip veggies one at a time in the beaten eggs and then dip them in the potato mixture. Coat well. Place on an ungreased cookie sheet Bake at 400* FOR 20-25 minutes. It is optional to serve with dressing or dip.

Amish Friendship Bread ~ LilBitMissty

This cake takes 10 days to make..but worth it!!

In a GLASS jar or a PLASTIC bowl, put in the following ingredients (This is the starter)...NEVER use a metal bowl or untenisls.

~~~NOTE~~~ WHEN MAKING THE STARTER, INSTEAD OF USING A BOWL, YOU CAN PUT THE "STARTER" INGREDIENTS IN A LARGE SIZE ZIP LOCK BAG. ON DAYS YOU ARE TO STIR IT JUST SQUISH THE BAG REAL GOOD. DO THAT A COUPLE TIMES A DAY ON "STIR" DAYS~~~~~~

Friendship Bread Starter

1 cup flour

1 cup sugar

1 cup milk

1/4 cup warm water...110 degrees

1 packet yeast...DO NOT use rapid yeast


Day 1..do nothing (This is the day you begin making the friendship bread).

Days 2,3,4 and 5...Stir with a WOODEN OR PLASTIC spoon

Day 6...add 1 cup flour, 1 cup sugar and 1 cup milk

Days 7,8 and 9..Stir with a Wooden or Plastic spoon.

Day 10...add 1 cup flour, 1 cup sugar and 1 cup milk

Put 1 cup of the batter in a plastic or glass bowl. Using 3 zip lock bags, put 1 cup of the starter in each bag. Starters can be frozen. When you take the starter out of the freezer, you will count that as day 1.

Cake:

Mix together:

1 cup starter

1 cup oil

1/2 cup milk

3 eggs

1 teaspoon vanilla

Mix well.


IN A SEPERATE BOWL MIX:

2 CUPS FLOUR

1 CUP SUGAR

1 1/2 TEASPOON BAKING POWDER

1 TEASPOON CINNAMON

1/2 TEASPOON SALT

1/2 TEASPOON BAKING SODA

1 CUP CHOPPED NUTS

1 LARGE box INSTANT VANILLA pudding

Combine with the cake ingredients listed above. Pour batter into 2 well greased and SUGARED loaf pans. Sprinkle the tops with cinnamon sugar. Bake 1 hour at 325*

Banana Sour Cream Coffee Cake ~ LilBitMissty

1/2 cup butter
1 cup sugar
2 eggs
1 cup over ripe bananas..mashed
1/2 cup sour cream
1 1/2 teaspoons vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt

Cream together the butter, sugar and eggs. Add banana, sour cream and vanilla. In a separate bowl, mix the flour, baking powder, baking soda and salt. Add slowly the first mixture. Mix well.

Streusel Topping:

1/2 cup sugar
1 1/2 teaspoons cinnamon
2 tablespoons butter
1 cup nuts..chopped (optional)

Mix ingredients with a fork making crumbs. Grease and flour a 9x13 inch pan OR a bunt pan.

Pour 1/2 of the batter mixture in the prepared pan. Sprinkle 1/2 of the streusel topping on the top. Repeat layer of batter with the streusel topping ending on the top. Bake at 350* 25-30 minutes for a 9x13 pan, OR 40 minutes for a bunt pan. This freezes well

Streusel topping

6 tablespoon(s) all-purpose flour
1/2 cup(s) light-brown sugar
1/4 teaspoon(s) allspice
1/2 stick(s) cold butter
Batter

1 cup(s) cornmeal
1 cup(s) all-purpose flour
1/2 cup(s) sugar
2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
3 eggs, lightly beaten
1 container(s) (8-ounce) sour cream
3 tablespoon(s) melted butter
2 teaspoon(s) vanilla
1 can(s) whole-berry cranberry sauce

Batter

1 cup(s) cornmeal
1 cup(s) all-purpose flour
1/2 cup(s) sugar
2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
3 eggs, lightly beaten
1 container(s) (8-ounce) sour cream
3 tablespoon(s) melted butter
2 teaspoon(s) vanilla
1 can(s) whole-berry cranberry sauce

Directions

Preheat oven to 400 degrees F. Line three 6-cup muffin tins with paper liners; set aside.
For streusel topping: In a bowl, mix flour, light-brown sugar, and allspice. Cut in butter, then keep chilled until ready to use.

For batter: In a separate bowl, combine cornmeal, flour, sugar, baking powder, baking soda, and salt. Stir in eggs, sour cream, butter, and vanilla until just combined.
In each muffin cup, place 2 tablespoons batter, top with 2 teaspoons canned whole-berry cranberry sauce, and sprinkle with streusel topping. Bake about 15 minutes.

Down-Under Cantaloupe Bread ~ LilBitMissty

3 eggs

1 cup oil

2 cups sugar

1 tablespoon vanilla

1 cantaloupe...Or what will= 2 cups puree

3 cups flour

1 teaspoon baking soda

3/4 teaspoon baking powder

2 teaspoons cinnamon

1/2 teaspoon ground ginger

1 cup nuts

Beat eggs. Add oil, sugar and vanilla. Peel cantaloupe. Cut cantaloupe into chunks and put into blender. You need 2 cups of the puree. Add the 2 cups puree to the egg mixture. Add remaining ingredients. Mix well. Pour into greased and floured loaf pan. Bake at 325* for 1 hour.

Honey Cornbread ~ LilBitMissty

1 2/3 cups flour

3/4 cup cornmeal

1 tablespoon baking powder

1 1/4 teaspoons salt

1/2 cup margarine

3/4 cup sugar

1/2 cup honey

2 eggs

1 2/3 cups milk

Preheat oven to 350*
Grease and flour 8x8 baking pan and set aside.
Combine flour, cornmeal, baking powder and salt in mixing bowl and set aside.
Place margarine and sugar in large bowl of mixer and cream until smooth. Add honey and eggs and beat to blend, scraping bottom and sides of bowl frequently.
Beat in half of the milk. Beat in half of the flour mixture. Repeat with remaining milk and flour mixture.
With mixer at lowest speed, continue to mix for 4 minutes.
Pour batter into prepared pan and bake in oven 50 to 60 minutes or until toothpick inserted in center comes out clean.

Pistachio Bread ~ LilBitMissty

1 box yellow cake mix

1 box INSTANT pistachio pudding mix

1 cup sour cream

1/4 cup oil

2 tablespoons water

4 eggs

1 cup chopped nuts

cinnamon

sugar

Mix together. DO NOT USE A MIXER. Grease 2 loaf pans. Make a mixture of cinnamon and sugar. Dust the pans with cinnamon sugar. Pour batter into pans. Sprinkle the tops with cinnamon sugar. Bake at 350* for 45-50 minutes

Salad Bowl Puff ~ LilBitMissty

Ham Salad Filling:

1 10 ounce pkg. frozen peas

2 cups cooked ham

1 cup cheddar cheese...grated

1 tablespoons onion..minced

3/4 cup mayonnaise

1 1/2 teaspoon prepared mustard

Rinse frozen peas under running COLD water to separate. Drain. Mix all ingredients together. Cover and refrigerate for at least 2 hours.

Shell:

2/3 CUP water

1/4 CUP butter

1 CUP Bisquick

4 eggs

Heat oven to 400*. Grease a 9 inch pie pan. In a 2 quart pan, bring the water and butter to a boil. Add Bisquick all at once. Stir vigorously over low heat til it forms a ball (about 1 1/2 minutes). Remove from heat. Beat in eggs one at a time. Beat til smooth. Spread in bottom of pie pan. Bake til it's puffed and dry in the center (about 35-40 minutes). Cool. Just before serving fill with the chilled Ham Salad Filling. Cut into wedges.

Zucchini Bread Pudding ~ LilBitMissty

4 cups day old zucchini bread...cut into 1 inch cubes
1 cup milk
3 egg whites
1 whole egg
1 teaspoon sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg

3 Tablespoons brown sugar
2 Tablespoons butter
Mix together milk, egg whites, whole egg, sugar, cinnamon and nutmeg. Pour over bread cubes. Push bread cubes around making sure they are well coated. Allow bread to soak in refrigerator 1 - 2 hours. Most of the liquid will be absorbed. Pour in a greased baking dish. Mix the brown sugar and the butter together and put on top. Place baking dish in a larger pan with about an inch of water in it. Bake at 350* for 50-60 minutes. Sprinkle with powdered sugar.

Thank you, HoneyBit.  I know that I don't have all of those recipes, so I really appreciate it.  And it was easy for me to click on and use.   

 

I also have more in my Meat Folder, which I'll copy tomorrow.

 

Thanks, again. LilBit has so many wonderful recipes.  I feel just terrible for her.  I truly hope that she is able to find her original recipes.  If not, then this can be a small consolation for her.
