@Harpa Yum, that sounds so good. Never tried it was apple pie spice. Simple and easy too. I am going to try this for my family.

I cut the squash in half lenghtwise, clean out the seeds, put a tbsp. of butter and a small amt of brown sugar in the cavity, bake at 350 degrees on a foil lined cookie sheet for about an hour or until fork tender.  Let it cool and them scoop out the squash.

I peel it and cut in cubes.  Toss it with olive oil, salt/pepper and either curry powder or smoked paprika and roast in 375 oven until done.
