Does it have a sour smell to it naturally?

@makena   I've used Buttermilk many times and it does have that type of smell in some regards.  As long as your date is good I think it's safe to use.

@Susan-QVC wow, thanks.  It's within a few days of expiration.  I had purchased it last week for a recipie and never used it.  I bake a lot and can't recall ever using it.  Thank You.  You answered my concern perfectly.

Yes and it should have a date on it.  I love cooking with it.  I make waffles, pancakes etc.  I look them up on the internet.Smiley Happy

@makena, according to several sites ... yes!

However, just check for the "use by date" ... buttermilk will keep beyond that date.

buttermilk substitute

1 cup milk (whole, 2%, or heavy cream)

1 tablespoon lemon juice or vinegar

Let the mixture stand at room temperature for 5 to 10 minutes. When it is ready, the milk will be slightly thickened and you will see small curdled bits (that is okay). This substitute will not become as thick as regular buttermilk; you will also not notice the curdled bits in your finished recipe.

Other Buttermilk Substitutes:

  • Yogurt: Mix 3/4 cup plain yogurt with 1/4 cup water to thin. Use as you would buttermilk.
  • Sour cream: Mix 3/4 cup sour cream with 1/4 cup plain water to thin. Use as you would buttermilk.
  • Kefir: Thin kefir as needed with milk or plain water until it reaches the consistency of buttermilk. Use as you would buttermilk.
  • Cream of tartar: Mix 1 cup of milk with 1 3/4 teaspoons cream of tartar. Let stand 5 to 10 minutes until slightly thickened and curdled.

@makena, you can also freeze buttermilk in plastic bags.

My grandparents use to have a snack after dinner, cornbread crumbled in a glass of buttermilk. I never was brave enough to try that but they sure seemed to enjoy it!!
