This recipe was first posted by Angel a couple years ago. It is the only recipe I have used since first trying it back then. The pancakes are very tender and delicious! I don't have Angel's orignal posted recipe and I have re-worded the directions below but it's still her same recipe.

2 cups flour
2 T sugar
2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
2 cups buttermilk
1/3 cup milk and a little more for thinner pancakes

1 tsp. vanilla
2 eggs
1/4 cup melted butter
Crisco for pan



Combine dry ingredients in a large bowl. Whisk until blended. Combine buttermilk, milk, eggs, vanilla and melted butter in a medium bowl. Whisk until blended.
Add buttermilk mixture to dry ingredients; mix until just blended, lumps are okay. Don’t over mix or pancakes will be tough. Heat pan, preferably a cast iron skillet, to medium. I make a little test pancake to see if temperature is right. Pour batter onto skillet with about a half of a teaspoon of Crisco to coat the pan. Add additional Crisco for every other pancake or when needed. Turn pancake when there are bubbles across the top of it. Pancakes should be deep golden brown. Only turn once so they won’t be tough. Makes about 14 tender pancakes.
