I have read a gazillion recipes for bubble & squeek over the years. The one I think is probably most original is from Tyler Florence. BUT I make it the way mom made it, I like alittle "juice" to dunk my bread & butter.
Bubble & Squeek
3 or 4 med. potatos peeled (or not) sliced THICK
1 onion sliced thick and quarted
1 small head of cabbage cut into chunks
s & p to taste
meat of choice, I like hamburger or smoked sausage, dh likes bacon
Put alittle oil in a dutch oven. Over high heat brown potatos just alittle, put in onions, and cabbage chunks and smoked sausage (if using). Reduce heat to med. pour in approx. 1 to 1 1/2 c. water. Cover tightly and simmer 40-45 min. adding water as needed (however much liquid you want) When done dot with butter.
I cook the hamburger or bacon separtely and add to dish when served.
