Brussels Sprouts w/ maple glaze--no oven required

MAPLE-GLAZED BRUSSELS SPROUTS--serves 8

 

7 slices thick-cut bacon, chopped

3 lbs. Brussels sprouts, trimmed and halved

Kosher salt

2 large shallots, thinly sliced

1/4 cup pure maple syrup

2 Tbsp. red wine vinegar

1/4 tsp. cayenne pepper

 

Cook bacon in large Dutch oven on medium, stirring occasionally until crisp.

Using slotted spoon, transfer to paper-towel-lined plate.

 

Strain drippings and reserve.  Add 3/4 cup water to pot and bring to simmer.

 

Add sprouts and 1/2 tsp salt and cook, covered, shaking pan often, until barely tender 4-6 minutes.

 

Uncover, turn heat to medium high.  Add 2 Tbsp, reserved drippings, then shallots and cook, tossing occasionally, until sprouts are golden brown, 2-3 minutes.

 

Add maple syrup, vinegar and cayenne and cook, tossing occasionally, until glazed, about 2 minutes. 

 

Toss with reserved bacon.
