Brussels Sprouts roasted w/ Bacon & Balsamic

This is the type of recipe I have been looking for when it comes to roasting brussels sprouts.

 

Lo and behold, it appears in the latest issue of Family Circle magazine.

 

BRUSSELS SPROUTS with BACON & BALSAMIC GLAZE

Makes 8 servings

 

2 lbs. large Brussels sprouts, trimmed and halved

2 Tbsp. EVOO

1 tsp. thyme leaves

1/2 tsp. salt

1/4 tsp. ground black pepper

6 slices bacon

1-1/2 Tbsp. Balsamic glaze

 

Heat oven to 400 degrees.

On foil-lined, rimmed baking sheet, toss sprouts with oil, thyme, salt & pepper.

Roast about 35 minutes.

 

Meanwhile, lay bacon on a rack set in a foil-lined rimmed baking sheet.

Roast 18-20 minutes.  (I find it sometimes takes longer than this to really cook bacon)

Let cool slightly and crumble.

Toss sprouts with two-thirds of the bacon.

Top with remaining bacon and drizzle with balsamic glaze (which I guess means just a quick drizzle  with balsamic vinegar).

Balsamic Glaze is quite thick.
