Brownie Cups
1 stick of butter
1/2 c chocolate chips
1/2 c chopped pecans
2 eggs
3/4 c sugar
1/2 c flour
1/2 t vanilla
In a microwave safe bowl, microwave the butter and chips on low heat. Let cool,then add pecans. In another bowl combine the eggs, sugar, flour and vanilla. Fold in the chocolate mixture. Fill the foil cup lined muffin cups 2/3 full. Bake at 325* for 35-38 minutes. This makes 9 muffins, and the empty cups need to have a little water in them when baking. Recipe can be doubled to make 18.
I didn't have any pecans, so I didn't use them, it make 9 nice muffins let them cool before eating them. Don't use the paper liners, as its a mess to get the muffin off the paper.
