So glad I stumbled upon your recipe, LoLa -- I was recently thinking that I'd like to find more ways to make brocolli. It's a vegetable that I really enjoy, but I've been getting tired of it lately so I'm glad to find a new way to make it. This sounds really delicious. I think I might skip the one step (boiling, shocking, drying) and just try using it from it's raw state. Since it gets finely chopped, I don't think it will make much of a differnce. I'll let you know how it turns out!!

I had to post an update in case anyone is interested. I made half the recipe today, because I was skeptical about getting these out of the pan looking pretty. I oiled the pan by hand with olive oil, not cooking spray. I was very careful to get all the nooks and crannys. Unfortunately, they stuck anyway.
I used frozen broccoli because that's all I had available today. I cooked it a few minutes, then squeezed it as much as I could, using cheesecloth.
I don't think the frozen broccoli was an issue. I'm not sure why they stuck so badly.

HouseCat... I'm so sorry that you experienced 'sticking'. I've made these several times and have always used non-stick cooking spray. Mine have never stuck. However, oil olive should release as well. I'm not quite sure what to suggest. Was it the cheese that gave you sticking issues?

I just made these a little while ago. As I stated in my earlier post, I skipped the cooking stage and just used the broccoli raw. They turned out completely fine -- really good in fact. I made sure that the broccoli was finely chopped, so there weren't any big crunchy pieces in it. We just had a real casual dinner of hot dogs and fries, so the broccoli tots were our vegetable for the meal. Hahaha My husband and I loved them! My daughter and grandson were over and they thought they were really good too. I only had mozzarella cheese on hand and would like to make these again with a sharp cheddar. Oh, and I used PAM cooking spray and had no issues with sticking. Thanks again for the recipe, LoLa. ![]()

My daughter beat me to the punch and made these first. She and my granddaughter really enjoyed them and so did I, when given one at drop-off time. I know this will be a staple at their house for a long time.

I made these tonight and they were very good. I put in a clove of garlic and I do not think that I would do that again and I would go strictly by your recipe. Thank you for a good one, and it was a nice change.
